Mix ahead and bake later to prepare a variety of cookies with a minimum of time and effort. Cookie dough will stay fresh several days in the refrigerator or freeter - ready to bake at your convenience. To be sure that all your cookies say to family and guests "This season is special and so are you!" here are some helpful cookie basics from the Kraft Kitchens. Ingredients Don't subsitute other shortening for margarine, the flavor and texture will be mouiiled. Use large eggs for baking. Don't substitute granulated sugar when the recipe calls for powdered sugar. Only use synthetic sweetners in recipes specifically developed for them. If unsure about a substitution, the rule is don't do it. It's important to beat margarine and sugar until well creamed to help sugar start to dissolve and to incorporate air into the dough for a light cookie. Be sure stick margarine is softened before beating or for convenience use soft margarine. Baking Preheat the oven so cookies are assured of uniform baking temperature. Use flat cookie sheets with low or no sides. High-side- d pans prevent proper browning. Shiny baking sheets yield most evenly baked and browned cookies. If using dark pans, reduce the oven temperature 25 deg. to reduce the risk of burning. Use baking pans that fit your oven properly - allow 2 inches from their edge to reach side of oven. Substitute the back of any large pan for a cookie sheet. Cool cookies thoroughly on a rack in single layers before storing. To keep cookies soft or chewy, store in an airtight container. To cookies from becoming limp, keep in a loosely-covere- d container in a cool, dry place. To crisp softened cookies, neat them in a 300 deg oven for 5 minues. Baked cookies can be stored in the refrigerator for up to 2 weeks or in the freezer for months if wrapped in moisture and vapor-proplastic bags or containers. Many cookie doughs freeze nicely - refrigerate doughs as well as rolled and drop cookie doughs. Store in freezer container up to 2 months. Thaw 6 hours in refrigerator. Bake within 24 hours. keep crunchy 2 of 3-- Storing and sending cookies Most cookies and bars tend to dry out or go limp. To restore freshness, cookies can be heated briefly before serving, but it is wiser to use good storage practices from the start. d tins Keep cookies in or containers. If for immediate use, store bar cookies in the pan in which they are baked. Cover with aluminum foil. Or store them in an aluminum pan with its own lid. However, to prolong freshness, be tightly-covere- sure to wrap these bars individually in foil after cooking and cutting. They are then all ready for serving, freezing, or packing in lunch boxes. To soften hard dry cookies, put them with a piece of bread or apple container. into a tightly-close- d Replace the bread or apple every few days, for they mold easily. Another way to restore moisture is to use a dampened paper napkin, wrapped in punctured foil. If you have frozen baked cookies ana want them for immediate thaw them unconsumption, wrapped, then heat them for a moment on a cookie sheet in a 300 deg. oven to restore crispness. This is also a good plan for weary "bought" cookies. If you are sending cookies or cakes to wrap them individually or put them into a polyethylene bag and bed them down in popcorn.
