Cut ulaee' fruit very fine. Cream butter well, then add sugar gradually and continue creaming until light and fluffy. Beat in egg yolks. Stir lemon juice into evaporated milk, then add slowly to egg mixture. Reserve '4 cup of the flour. Sift remaining flour with soda, salt and spices. Stir all at once into egg mixture. Mix the reserved '4 cup flour with the glace' fruit, raisins and pecans to coat well. Add to egg mixture, stirring to blend thoroughly. Fold in egg whites which have been beaten stiff hut not dry. Drop by onto an aluminum foil covered baking sheet. Bake in preheated slow oven (325 F) until lightly browned, about 20 to 25 minutes. Remove immediately from baking sheet to racks to cool. Makes about 9 dozen 1 1 cookies.
