Eber-har- d and Elder Joel C. Eber-harreturned from the An Is -- WvJb-i-r Adventure When Mrs. Von (Jean) Christensen, 832 No. 1st West, Tremonton, makes home- made bread it's an adventure. That's the best way to describe her technique. "I was reared on a farm in Morgan and we always made our own homemade bread," she said. "Never do I make just a regular batch of bread," she emphasized. For instance, she never uses sugar in her bread unless she's making it for a banquet or something like that. In place of sugar she throws in a little jam or the juice of canned fruits. "I had some crabapples once," she recalled. The family ate the apples but left the juice. "I couldn't see any reason why the juice wouldn't be acceptable in bread." She even put a little tomato juice in her bread once. "It colored it but it didn't flavor it," she added. Everybody is going to laugh," she said in embarrassment of her techniques. When she puts up fruit, Mrs. Christensen uses half of a cup of sugar in a quart. So when she uses fruit juice to sweeten her bread she has to compute it on that basis. "A lot of people put up things that they end up throwing away," she noted. "I throw very little away... If I get peaches the kid's aren't eating, well, I just make fruit cups out of it and they they'll eat any kind of fruit that way. She'll add grapefruit flavoring, for instance, and some marschino cherry juice for sweetening. She also has a technique of adding a cup of whole cooked wheat to her breads which texture. She tosses give the food a nut-lik- e in a little molasses and, of course, uses something other than sugar to sweeten the mix. The whole cooked wheat can be used in any recipe but she cautions that it won't freeze in anything such as banana bread which uses fruits. As it freezes the fruit "it seems to draw the moisture out of the wheat" and the wheat becomes almost as hard as when it was first harvested. If breadmakers don't want to use cooked whole wheat, they can toss in a half cup of cracked wheat. Mrs. Christensen and her husband, Von, are parents of six children: Vonda, a nursing student at Ricks College; LyNae Romrell, whose husband works in the bookstore at Ricks; Michael, a junior at Bear River high; Douglas, 14, Maren, a sixth grader, and VeOnna, a second THIS WEEK'S good cook is Mrs. Von (Jean) Christensen shown here with two of her daughters (I to r) VeOnna and Maren. a visiting teacher and sings in the choir. "I enjoy good music," she added. "If I have the opportunity I go to the Utah Symphony." She also sews but says it isn't a hobby. "You're supposed to really enjoy hobbies." She is also an active genealogist. "I've collected an awful lot that has been done," saying, "it's not hard to copy." "But you have to do this to know where to start" when you belong to a family that has been active in genealogy for many years. She is now taking a class on how to do genealogical research in England.
