Yes, it will always be one of my favorite holidays, but when it comes to nuts now that is true love. As a nutrition educator, it is known that nuts are high on the nutritional value list for the many great qualities found in nuts. They are rich in protein, fiber and healthy fat and if eaten in moderation are shown to reduce heart disease and your weight! A handful of nuts equals about 1 ounce.. The Food and Drug Association (FDA) recommends 1.5 ounces daily or about one and a half handfuls. So now that my love for nuts is justified with great nutritional facts here is one of my favorite holiday recipes that use nuts. first fell in love with this twist on almonds at the Winter Olympics 2002 held in Salt Lake City. For this house was different, it was dark and dreary, found the home of a soldier, once could see clearly. With I I The soldier lay sleeping, silent, alone, curled up on the floor in this one bedroom home. The face was so gentle, the room in such disorder, not how pictured a United States soldier. I Was this the hero of whom J'd just read? Curled lip on a poncho, the floor for a bed? realized the families that saw this night, owed their lives to these soldiers who were willing to fight. I I Soon round the world, the children would play, and grownups would celebrate a bright Christmas day. enjoyed freedom each month of the year, because of the soldiers, like the one lying here. They all couldn't help wonder how many lay alone, on a cold Christmas eve in a land far from home. I The very thought brought a tear to my eye, dropped to my knees and started to cry. I The soldier awakened and heard a rough voice, "Santa don't cry, this life is my choice; I 4 4-- H The Beaver Horse Club has had a busy year. There were 27 members enrolled this year. Camp was the first outing we conquered. With a "60's Hippie Theme" and great weather a lot of fun was had by all. A special thank you to Holly Evans (leader) and Theresa Ashworth (Mom) for braving the nights and to the other parents and leaders who helped in any way. Next came out June Horse Show, it was a very fun and smooth running show thanks to all the hard work put in by the parents. We appreciate you! Also thank you to Gena Williams for being the show steward and to our guest chefs' Emeril Lagasse (Roger Kesler) and Chef Boyardee (Larry White) and to Karla Evans (for her awesome BBQ Beef) for a most delicious concession stand. Our concession stand is a fund raiser for us and thanks to all. the families who donated groceries. It made it all the more profitable. Next was the July show in Milford. In August the Beaver County Fair and Region in and state in Panguitch, in Washington County September. A Gymkhana we held to raise money for a timer that was not only a great time but was so successful that we accomplished that goal. A big thanks goes to Cub Enterprises for to donating hats for the Beaver Roping Club for their timer, an encore appearance of our "special chefs", the Williams for the use of the sound system and to all the parents and members who helped in any way to make this a smooth running show. In October awards were held and in November we decorated a tree for the Festival of Trees which was not only fun, but very worthwhile and rewarding (and that is another story in 4-- 4-- H itself). We also want to say a special thank you to the Beaver County Riding Club and also to Larry Weaver who was always on the spot to surface the arena for us. Last but not least, to all the parents who help each week Jesse Tukuafu has been called to serve a mission for the Church of Jesus Christ of Latter Day Saints. He has been called to labor in the Washington, Everett Mission. Elder Tukuafu will be speaking in Sacrament on Dec. 26, 2004 at 11 a.m. in the Milford 2nd Ward. He will leave for the MTC on December 29th. Jesse is the son of Rose Freytag and Mann Tukuafu, and the grandson of Tomasi & Irene Tukuafu and Ray & kay Palmer. He graduated from BHS last year. While attending BHS he participated in football, basketball, track, golf and band. Jesse has planned to serve a mission ever since he was little and is very excited to finally be able to go out and serve. I Beaver High had a kind of lackluster football season this year. Still, some of our players list published made the in the Salt Lake Tribune. Running back Ben Roberts was a 1 st Team pick. Ben is the son of Debra & Don Roberts. 2nd Team selection was Randon Lessing. Randons folks are Janet & Hal. Honorable mention was given to Trevor Bradshaw, son of Martha & Kelly Bradshaw and Dustin Carter, son of LeeAnn & Neil Carter. Dustin played the entire season with a wrist. broken mending to all. Congratulations All-Sta- te Preston Mitchell received New Arrival Gabriele J. C. Greenfield was born on November 14, 2004, at the Valley View Hospital in Cedar City. Gabriele is the son of Brandi & John Greenfield. There are two Cy and Eligah, a Johnny Aliesha. and a Grandparents are Lillus and Harry Sanflippo of Milford, and of San Greenfield Paula Fernando, Ca., and J. C. Greenfield of Los Angeles, Ca.. step-brother- s, half-brothe- r, half-siste-r, 8-- Senior Menus his call for an LDS Mission to the Phillipine Island of Baeolod. He enters the MTC in February. Preston is the son of Cydney & Del Bracken of St. George and David Mitchell of Parowan, grandson of Ann & Al Marshall. A big thank you to Hal & Nell Smith for the dish of chocolate goodies. He was born December 18, 1916 in Beaver, Utah to Larkin Andrew He & Ethel Roberts Erickson. on June Mima married 20, Day 1939 in Beaver, Utah and their marriage was later solemnize in the St George LDS Temple.on April 15, 1950. Len was an active member of the LDS Church and was an High Priest. He enjoyed hunting and riding horses. He worked with the Boy Scouts for many years. He enjoyed working and inventing new items. He was a loving husband, father father and by all. He is survived by his wife Mima Erickson of Beaver, four Milo sons, Ray (JoAnn) Fred Erickson of Beaver, Erickson of Beaver, (Denise) Keith (Beverlee) Erickson of & Milford Eddie (Karen) Erickson of Beaver. Spread almonds in a single layer in baking pan. Bake for minutes, until lightly toasted: Remove from oven and cool completely, about 30 minutes. Reduce oven temperature to 300 degrees. Generously grease 2 baking pans. In a large bowl, whisk egg whites until foamy. Whisk in sugars, vanilla, cinnamon and salt. Stir in toasted almonds; toss until well coated. Divide nuts between pans, spreading them in a single layer. Bake for 10 minutes. Remove from oven, stir, and separate almonds that are stuck together. (Nuts will be very sticky now but will become crisp as they cool.) Return to oven and bake another 10 to 12 minutes, until nuts are a pale golden brown and appear dry. Remove from oven and let sit for 3 to 5 minutes. When nuts begin to harden, quickly loosen them from the pan with a metal spatula and spread out on waxed paper to finish cooling. Separate into individual pieces or small clusters. Store in an airtight con- tainer up to 1 week.
