Crayfish are a delicacy in Europe and a mainstay in Cajun cooking. But crayfish are an overlooked delicacy in Utah. Utah has many crayfish waters, including Lake Powell, Deer Creek, Big Sandwash, Bullock, Starvation, Flaming Gorge and Steinak-o- r reservoirs. There is no bag or possession limit on crayfish, but an angler doos a current Utah fishing or combination license. There are a lot of ways to c jU h crayfish. The easiest is to tie a string around a large piece of bait, tos.s it a few feet out into tin- water, wait for a few minutes and then pull it in. The crayfish will usually cling to the bait long enough to net them or shake them into a bucket. Smelly and slightly spoiled meats are probably the best baits, but chicken bones from a picnic lunch can be used to catch dinner. m-e- - Fish will be slocked heavily before Labor Day weekend Most major waters statewide will be stocked heavily before the Labor Day holiday.
