Prices charged are calculated to cover food costs, labor, transportation and other operating costs. The restaurant is not subsidized by allocated funds. It must operate at a profit or face the near-terpossibility of closure. The salad bar at Bldg. 230 is well received by our patrons. Comments indicate the choice and availability of vegetables and fruits are sufficient and prices charged are very fair and reasonable. The vast majority of salads purchased at the Cross winds restaurant average 12 ounces, or m Draw: S: $1.68 a plate, which would consist of a varied combination of fruit and vegetable products. Prices will vary with season product market ch anges. Recent flooding in Arizona sent the price of lettuce spiraling upward. As a result, the restaurant had to make adjustments accordingly.
