This thought could be used in many different areas of your life, but this week it was a thought that came from my cook in' place. This past week as I was watching the clock getting closer and closer to five o'clock and knowing that my husband would be coming com-ing home very soon. I was wondering what would be cooking as he walked through the d(xr. 1 am lucky to have a husband hus-band who does not expect dinner din-ner to be on the table every night as he walks through the dixr from work, but I do like to have a home-cooked meal waiting for him and our children as often as 1 possibly can. The clock was ticking fast, and 1 was not sure what we had on hand that I could throw together from the pantry. pan-try. The thought kept running run-ning through my mind, "We do not have anything to eat. I should have gone to the store today." I searched high and low in the freezer and the pantry and knew that the yummy chicken tenders I had in the freezer could be turned into a masterpiece with a little creativity cre-ativity on my part. I pulled out some garlic, cream of chicken soup and a small amount of cream cheese I had left over from a previous meal. I decided I could not go wrong with garlic and chicken. I began pouring and creating and the smell of my cook in' place smelled like I had been working all day. I knew a couple of our kids would complain if chicken were the only thing being served, so I started some rice and a batch of biscuits. Within 30 minutes I had made a perfect per-fect meal out of nothing but odds and ends. My children and my husband raved and everyone wanted this meal to be named after them, because they all claimed it was their favorite. Many of you out there that cook feel as if you have to have a recipe to follow step by step. This is not true. Start with small amounts of your ingredients, do a taste test and add a little more until you have the desired taste. Who knows what the desired taste should be? When it is right, you will know. I think we often times overlook the simple things. Many times, the things we need to improve our situation are looking right at us, but we look too deep and try to make things too difficult. I do this while I am cooking all time. I think I need fancy ingredients and a lot of time to make a meal that would taste delicious, but this is just not true. Take what you have and make the best of it. You will be surprised at what the outcome will be. Until next week's batter chatter, open your pantry and find the ingredients that have been waiting for you to make something of them! I am looking for spring recipes rec-ipes to share.
