I have these words displayed in our home and it helps to remind me daily, that simple is most always better. bet-ter. I somehow inherited this trait of thinking that everything every-thing I do in life needs to be a big production. I am learning that the older I become and the bigger my family becomes I do not have the time or energy like I used to. I have in the past week cleared clutter arid things from our home and lives that we no longer need. Now, I have to admit that seeing my stuff and things Ico Croam roll cleared from our home has been hard, but as I was giving most of these things away I have had to remember it is just stuff. 1 believe for my husband it has been even harder. My husband is what 1 often refer to as a "pack rat." He will keep things in the garage for years, because we may need it someday. Most of these things we have not ever used and I have finally started clearing the clutter. It is such a peaceful peace-ful feeling to your soul and mind to clean out and keep it simple. As the clutter has been cleared from our lives, 1 have also been trying to simplify many of my recipes. I have looked for time saving ways to make my meals and desserts easier and how to cut corners in order to save time and not loose flavor. I am finding that some recipes reci-pes you cannot change, they are what they are. But with others, many people will not know if you have used homemade home-made sauce or bottled. I have found with this week's recipe it is really not a "recipe" anymore. It is more of an idea. 1 have cut a corner to simplify something that is so delicious and could be time consuming if you allowed it to be. But I have learned how to cut the time consuming part out with a simple cake mix. The hard part is telling my mind that is OK to not have a cake from scratch. This week I plan to cut more stuff and clutter from life, as I hope you will take a step back and do the same. You will feel so free and peaceful. Remember Remem-ber it is just stuff ... and it is OK to cut a corner here and there to save your sanity. I will look forward to more batter chatter chat-ter next week. Line a jellyroll cookie sheet with Parchment Paper. Pour cake mix onto cookie sheet. Bake on 350 degrees for approx. 18-20 minutes. Check for doneness when toothpick comes out clean. Remove from cookie sheet and let cool on parchment paper on a cooling rack. While your cake is cooling set out to soften a 12-gallon vanilla ice cream. When cake is cool and ice cream is soft cut ice cream into strips and place on cake. When cake is completely covered with ice cream, (I generally use 34 of the 12 gallon) start at one end and begin rolling carefully pulling parchment paper back as you roll to the other end. Wrap in plastic wrap and foil and press firmly on the roll. Freeze overnight or at least for 5 hours. Remove from freezer and cut into slices. You may also use mint ice cream, or a white cake mix with strawberry or raspberry ice cream. Experiment. Your imagination is the limit. i.,j,ILti m i x tit l! W ', Please buckle up!
