Show Orem-Geneva Times Thursday, October 1, 1970 Venison Swiss Steak in Sour Cream Serves 6 1 bay leaf 8 peppercorns 1 teaspoon salt 1 tablespoon butter 4 tablespoons flour cup sour cream 2. 3. 4. 5. 6. 2 pounds sirloin or round steak, 1 inch thick V4 cup bacon fat or other fat 1 clove garlic, crushed lU cup onions, minced ' 2 cups water 1 cup tart fruit juice, cranberry or apple Melt fat in heavy skillet, add meat and garlic ana saute until Drown on all sides. Arrange meat in 2 quart casserole. t Put onions in skillet and cook 2 minutes in remaining fat Add water, juices, bay leaf, peppercorns and salt. Pour this mixture over venison in casserole. N Bake in slow oven 325 for 30-60 minutes (or until meat is tender). Melt butter in fry pan, stir, in flour. Stir constantly until smooth. ow temperature for five minutes. Pour 1 aUU vca x over meat in casserole. Serve immediately with buttered noodles or plain. Venison Swiss Steak Variations 3-4 servings per pound Round steak, 1 inch thick M teaspoon pepper Basic flour mixture 2 tablespoons fat V2 cup flour 1 cup water 2 teaspoons salt 1. Pound flour into round steak, using the edge of a plate or French knife. 2. Brown steak in hot fat in a heavy skillet. Turn and brown second side. 3. Add water and cover with a tight fitting lid. 4. Cook in moderate oven 350 for Vfa hours or simmer on top of stove for same length of time. ' VARIATIONS: Spanish Steak: 1 cup canned tomatoes, 1 onion chopped, 1 green pepper chopped, cup chopped celery. Use this' in place of the water in the Swiss Steak. Smothered Steak with Onions: Proceed as for Swiss Steak. Add 3 onions thinly sliced when steak is about half cooked. Swiss Steak with Mushroom Sauce: Add cream of mushroom soup and xh cup of water in the place of water. Stroganoff Steak: Proceed as for Swiss Steak. Add cup cultured sour cream just prior to serving.
