Virginia Daniels Some of the best corn bread I've ever tasted was at my neice's house. She used bacon grease instead of shortening the recipe called for. Eggs taste much better when fried in bacon grease, so keep some to use when you're not also frying bacon to go with the eggs. Fried potatoes. Bacon grease gives them a wonderful flavor and helps them brown nicely. Add some bacon grease to green beans instead of butter or margarine, and to dry beans. With the latter, however, be sure to add the bacon grease AFTER they are cooked. Otherwise, the salt in the fat will keep them from getting tender. (Remember the rule about cooking dried foods? Add salt and-or sugar AFTER cooking.) Have you tried spinach salad, the one that uses bacon fat and vinegar with sugar and other - spices for the dressing? You can add chopped celery, onions, or other vegetables of your choice to the broken spinach leaves. Crisp bacon crumbles gives it the final touch. It's truly delicious. If you make soap, bacon fat can be added to your collection of used fat for this purpose. Have you priced cooking oil lately? That ought to give us ideas about using up our bacon fat. Oh yes, some people like it for popcorn. A tablespoon or two, before the unpopped corn is added, gives a nice flavor. Dear Vi: I know a blind lady who keeps her house neat and tidy at all times. One of her tricks that I thought was -interesting is to put a large safety pin in the right-hand corner of each sheet, blanket, or spread so she will know how these should go on the bed. Enid Dartmouth I lost no time passing this one along to the newly-blind lady in our neighborhood, Enid. She's trying hard to learn to do as much as possible for herself. I also showed her how to turn the sheet down over the blanket, then pin all thicknesses of the bedding along the wide hem of the sheet, using large safety pins. . This helps me keep my bed straight and easily made, so it should help her, also. It's a good idea for children's beds, too. The bedding doesn't tear if you're careful to pin through all layers and through the hem of the sheet. . Dear Vi: You ve undoubtedly un-doubtedly tried cakes that make their own topping as they bake, but have you tried this with pies. Put a layer of ' mar-shmellows mar-shmellows in the bottom crust before adding pumpkin or custard pie filling. The mar-shmellows mar-shmellows melt and float to the top, make a nice topping. Dear Vi: I dropped my iron, making a deep hole in our new vinyl flooring, but you can hardly notice it. We melted down some crayons that matched and filled the hole until it was level with the floor. It's been there several months and I suppose it will eventually come out, but it if does, no problem. We'll do a repeat act. Dear Vi: The new nylon and suede track shoes the kids wear now can't be put in the washing machine like the old-type canvas ones. We use foam upholstery cleaner on ours, rubbing it in well. After it dries, the shoes look much better. Cathy Turley llmmra, I wonder if that would also work on baseball and golf hats. The lose their stiffness when washed. Has anyone tried this on felt hats? With cowboy hats so much in vogue, this would be a boon if it works. Dear Readers: Wheat nut bread, a popular specialty loaf featured by many bakers, contains cooked wheat buds. We like it, so I make it often. Last week, however, because of peculiar circumstances, I substituted sub-stituted pearl barley for the wheat buds. Why, pearl barley? Well, the bottom of a 25-pound bag of pearl barley accidentally ac-cidentally got wet, leaving me with five or six pounds to use up right away or throw out. I gave much of that away, but still had a lot to use. We like pearl barley in soup, but that much soup! So, remembering wheat nut bread, I took a chance and substituted pearl barley. It worked. The bread was delicious, especially toasted and I had the satisfaction of creating an original recipe. Thanks to that annoying accident, we'll be having pearl barley bread frequently from now on.
