Begin with a delicate cake layer. Top it with fruits of your choice and cover all with a flavorful, translucent, trans-lucent, corn starch thickened glaze. Fruit Gateau Sliced peaches, halved strawberries and melon balls, and whole blueberries 1 recipe Glaze (below) Yz cup heavy cream, whipped . Grease 1 (9 x l1 2-inch) layer cake pan. Beat eggs in small mixer bowl until fluffy. Gradually add sugar and salt, beating until mixture is doubled in hulk and mounds slightly when dropped from spoon. Sift flour and corn starch over egg mixture: mix-ture: fold in. Pour into prepared pan. Bake in n 350:F oven about 25 minutes or until top springs back when lightly touched. Cool slightly. Remove from pan. Cool onVire rack. Then place on serving plate and arrange fruits on cake. Spoon glaze evenly over fruit. Let set 30 minutes. Pipe rosettes of whipped cream on gateau. Makes 8 servings. Glaze: Mix together in a saucepan, 1 tablespoon corn starch, 1 cup" apple juice and 1 tablespoon lemon juice. Cook over medium heat, stirring constantly, until mixture comes to a boil and boils 1 minute. Reduce heat and simmer 1 minute. Cool. Makes 1 cup. . When a child feels encouraged and loved for himself, him-self, he has the strength and. motivation to discover and achieve his potentialities. A third crucial factor is the degree to which the total community environment seems to be "for" or "against" children. The child's experi-. experi-. ences at school, on the play- ground, and in his neighborhood neighbor-hood can thwart or foster healthy development. - The National Institute of Mental Health, a component -of HEW's Alcohol, Drug Abuse, and Mental Health Administration, Ad-ministration, has published a pamphlet titled Facts About the Mental Health of Children, Chil-dren, which gives helpful information in-formation and advice for raising rais-ing mentally healthy children.' The publication discusses - the influence of heredity and environment on mental health, saying: "Today we are just beginning to understand that heredity and environment are so deeply entwined that one can never separate them, and that both factors play extremely ex-tremely important roles in human hu-man growth." : Also discussed are: the differences dif-ferences between an eniolion-ally eniolion-ally disturbed child and one who merely needs firmer discipline. Third, if the shoplifter gets away with it, the cost of what he takes is passed on to you. Already that's a $15-million-a-year price tag.
