Alternative spring break finds student helping the needy in Mexico Back in January, Joleen Kr- femin wrote to the Vernal Ex- ress. Unfortunately, her letter as never received. It contained nformation about wrapping up ier graduate degree in Cedar ity at Southern Utah Univer- ity I She and a small group of Jtudents were about to head Jpr spring break in Mexico to iftake repairs at an orphan-?e. orphan-?e. She was soliciting funds to assist in this effort, writing: "San Humberto's Ranch of the Child was founded in 1971 by Hermanas Missioneras del Nino Cristo in Empalme, Sonera. So-nera. The foundation was created cre-ated in 1964 by Lucas Carbajal Lopez, a Catholic Priest from Guanajuato and two nuns from Mazatlan, Sinaloa. They were deeply concerned about the unwanted children who lived on the streets. Many of these children were orphaned, while others were abandoned by drug addicts, prostitutes and parents with other social and financial problems." With their work accomplished accom-plished Joleen now writes: "Dear Uintah Basin Citizens: Citi-zens: A month ago I had the wonderful opportunity to visit the enchanting countryside of Mexico. There I was able, with a small group of friends, to assist as-sist a small, under funded and understaffed orphanage. My trip and our work was made partially possible by your generosity, gen-erosity, and for that I would like to express my gratitude. "We live in a world of such abundance even the least among us is wealthy when compared to other areas of the world. We are so blessed to live in such a wonderful place. Most of us were privileged enough to be born of loving parents who cared for us and were there for us when we needed them. It was an incredibly life changing chang-ing experience to spend a week with 40 children who have been taken from, or abandoned by their parents. I was humbled by the sense of family that the children showed for one another, anoth-er, many of them are siblings, entire families who have been placed in the gentle care of the Catholic Church. Each child is constantly aware of the other children around him or her always sharing, always selfless and smiling. We have so much to learn from their example. "I would like to personally thank all the members of our communities who stepped forward for-ward to donate materials and funds to assist this worthwhile work. Your donations went directly di-rectly to the needy; I saw it with my own eyes. Your donations brought smiles to the faces of the most adorable children. BASIC MEAT LOAF Ingredients: 2 lbs ground beef (about 75-25) 75-25) , 3 large eggs 1 cup chopped yellow onions 34 cup dried bread crumbs (unseasoned) 23 cup ketchup (catsup) ' 2 cloves fresh garlic, smashed 1 tsp parsley, chopped 12 tsp ground thyme 12 tsp black pepper 12 tsp sea salt Topping: 2 tbsp ketchup Procedure: Pre-heat oven to 350 degrees. Mix all ingredients in a large bowl then place the mixture in a large loaf pan. Spread 2 tbsp ketchup over the top of the loaf. Bake for one hour or until the loaf is firm in the middle. Serve with mashed potatoes and your favorite fresh vegetable. veg-etable. This recipe should feed four VERY HUNGRY people. For Ms. Poulson, the KTLLER part comes with a myriad of variations to this recipe. Some people like meat Chef Philpot loaf with cheddar cheese ooz- ' ing from the center. This is : done by putting half of the mix- ture in the loaf pan, then about 6 slices of cheese, and top with the remainder of the mixture. Olives, mushrooms, onions, Oh My! ... the possibilities are endless. The beauty of this basic recipe is that it pro- ; duces a moist loaf with its own unique flavor, which can be easily sliced - but doesn't fall apart as you serve it.
