Sweet, juicy peaches lend themselves to so many delicious recipes, but none are more satisfying than a homemade peach pie fresh from the oven. HOMEMADE PEACH PIE 4 cups sliced peeled peaches 34 cup sugar 14 cup Minute tapioca 1 tablespoon lemon juice Pastry for 2-crust 9-inch pie 1 tablespoon margarine or butter Mix peaches, sugar, tapioca and lemon juice in large bowl. Let stand 15 minutes. Heat oven to 400F. Roll 12 of the pastry to 11-inch circle on lightly floured surface. sur-face. Line 9-inch pie plate with pastry, allowing 12-inch overhang. over-hang. Fill with peach mixture. Dot with spread. Roll remaining pastry to 12-inch circle. Cover pie with pastry; seal and flute edge. Cut several slits to permit steam to escape. Cut into 10 (12-inch) strips with pastry wheel or knife. Place 5 of the strips over filling. Weave lattice crust with remaining strips by folding back alternate strips as each cross strip is added. Fold trimmed edge of lower pastry over ends of strips; seal and flute edge. Bake as directed above. Roll pastry 2 inches larger than pie plate. Utah gains valuable economic tool The Sample Library of the Utah Geological Survey has saved four semi-truck loads of irreplaceable tar sand and potash drilling cores from destruction. The UGS transported these valuable geological resources from Denver to Salt Lake City for permanent storage in UGS Sample Library. The drilling cores were scheduled for disposal in Denver due to severe budget cuts at the U. S. Geological Survey which will force closure of their repository. "These cores originally cost petroleum pe-troleum and mining companies millions mil-lions of dollars to collect and are of great value to future development of the sizable tar sand and potash deposits of Utah," said Bryce Tripp, UGS Senior Geologist. "We can ensure en-sure they'll remain accessible to scientists, engineers and exploration geologists for research." The UGS Sample Library contains con-tains thousands of well cores and other samples which companies use extensively in the search for oil, natural gas and minerals. Utah's tar sand deposits contain 14 to 29 billion bil-lion barrels of oil. The potash deposits de-posits in southeastern Utah contain hundreds of millions of tons of potassium chloride, an essential plant nutrient added to fertilizers.
