Individual Pumpkin Cheesecakes Crust: 1-12 cups crushed gingersnap cookies 3 tablespoons firmly packed light brown sugar 14 cup butter, melted Filling: 1 rackaee (8 ounces' nlus 1 nark. agc (3 ounces) cream cheese, soft ened 12 cup granulated sugar legg 1 tablespoon grated orange peel 34 teaspoon pumpkin pie spice 34 cup canned pumpkin Topping: 12 cup dairy sour cream 1 tablespoons granulated sugar Grated orange peel, if desired Fresh currants, if desired Line twelve 2-172 inch muffin filling, beat cream cheese and sugar in large mixing bowl on high speed unul light and fluffy. Beat in egg, orange peel and pumpkin pie spice. Stir in pumpkin. Spoon equal amounts into crumb shells, spreading spread-ing evenly. Bake 20 minutes or until filling is set Cool slightly. For lop ping, combine sour cream and sugar. sug-ar. Tope each cheesecake with about 2 teaspoons of sour cream mixture, cool 10 room lempcraurc; refrigerate refriger-ate several hours before serving. The tree and four others were purchased pur-chased a the Festival of Trees by a Utah County businessman and donated do-nated anonymously to the UUP in Orcm. "No one wants to be the next star hanging from the tree," said Ll Brent Shelby of the Orcm UUP office of-fice in a Salt Lake Tribune article. The tree was the brainchild of Chris Peterson, the wife of Trooper Jack Peterson of Vernal. She says she wanted to do something to recognize rec-ognize those troopers who died doing do-ing their job. The idea was sparked as a result of the death of U. Doyle R. Thorn in a helicopter crash earlier earli-er this year while searching for a lost toddler in a rugged area near Strawberry.
