The shrimp bowl will stay, but other menu items may be slightly changed, according to Hersh Ipaktchian, president of HIP Enter- prises. 'We intend to enhance and-expand and-expand the menu items while lowering lower-ing some of the lunch prices and increasing in-creasing the service time,' he said. 'We'll keep the concept of leisurely dining, and expand the menu to include in-clude a larger choice of portions, a pepper steak and some stir-fry and Cajun specialties. In our view, Mulboons is already one of Utah's great restaurants.' Allen Hospitality Group, the parent company of the three Mul- boons sites in Trolly Square, Mid-, vale and Ogden, filed bankruptcy . earlier this year. Ipaktchian purchased pur-chased the three restaurants from the bankruptcy court for $1 million, with HIP Enterprises assuming responsibility of the restaurants on September L Studebaker's Private Club, another Allen Hospitality property, was not included in the deal. The HEP Enterprises management manage-ment team -includes two of Ipaktchian's sons: Rich, 27,. vice-president vice-president of operations, and David, 23, general manager of the com- -pane's restaurant -division. The. company has real estate and storage . facility investments along with ownership of the Peppercorn and Don Pedro's restaurants in Layton and Hobo Jo's fast-food locations in Layton, Kaysville and Ogden. The Mulboons purchase increases in-creases the restaurant division's annual an-nual sales to more than $10 million. The restaurants will employ nearly 400. - Ipaktchian became involved in the foodservice business 24 years ago by acquiring a then low-volumn Arctic Circle dirve-in in Layton. His friends thought he was 'crazy,' he remembers, for using his car as collateral but he maintains he 'could see the future in which the working woman and professional business management would make foodservice a big business. Dining out today is no longer a luxury. For many Utahns, it's a daily fact-of-life.' Ipaktchian has been awarded the Utah Restaurant Association's Golden Spoon Award citing him as the 'Restauranteur of the Year' and was named by former Gov.
