Show P H me CI neWS By Angie Martin n 1 enjoy smoked meats and have a small commercial smoker however when we lived In Idaho we converted x an old refrigerator into a smoker This t worked very well Veil but if you ha have ve a kl barbecue with a cover It will do just as aswell aswell well suggestions The following are some i for smoking and you may baste the meat with a barbecue sauce while It is smoking or serve with a sauce when it has finished smoking Or you may marinate your your meat before smoking r Anyway it is delicious I hav have included l 1 jl I n some favorite sauce recipes as well as a marinade recipe r rI r I SMOKED RIBS I Five or six slabs slabs of pork ribs I Salt I II I Pepper Hickory Hickory wood chips I Favorite barbecue sauce I I Have the butcher remove top strip of back bone from ribs if not notI already done Build medium fire at one end of your barbecue Top with I themI hickory chips These may be soaked in water if desired to keep them I from burning down so fast Salt and pepper ribs well Pork ribs have I enough fat to baste themselves Place at far end of grill not over fire I Turn and swap around about every 1 III hours Total cooking time will be 4 I I to 6 hours The longer the better for tenderness but meat should not be I I atI falling off the bone Charcoal and hickory may have to be added a little at ata I a time during cooking period After ribs are done cut apart and serve I with your favorite sauce If you have ribs left over wrap well in foil and andI I freeze reheat over charcoal fire or in oven Broilers are also delicious I prepared this way Rub with cooking oil salt and pepper Smoke hours I sM SMOKED m- m mi HAM i 6 to 8 pound cooked ham bone In inI I 1 part brown sugar 1 part lemon juice 1 part dark molasses I 2 cans diced or crushed pineapple with juice Smoke ham on grill away from coals for 1 to hours use Hickory Chips and charcoal Remove and wrap in foil to prevent drying Return to grill still on opposite end from coals for another 2 to 3 hours Unwrap again and score top and sides deeply Pour mixture of sugar lemon juice and molas molasses es over ham and Return to grill for 2 12 hour Ham should be cooked by this time Unwrap once more and surround ham with pineapple pouring juice over top Wrap and heat 15 minutes just enough I for pineapple to heat but not wilt t I SUPER BARBECUE SAUCE I 44 4 cup vinegar 1 1 cup water I 2 sugar J 4 1 prepared mustard i I 2 1 tsp pepper a aI d I tsp salt saltI I 4 1 4 tsp cayenne pepper 1 thick slice of lemon lemonI I sliced onion 1 J I 4 1 cup butter 0 I n k L 11 l 2 1 CUp catsup 2 Worcestershire Sauce Lea Perrins I smoke In a sauce pan mix all ingredients except the catsup Worcestershire sauce and liquid smoke Simmer uncovered for 20 minutes Add the re- re remaining re ingredients and bring to a boil Serve hot Use for I ribs chicken or lamb You can also use this as a basting sauce M Makes kes 11 1 a aI I cups sauce Doubles or triples easily I BAR QUE BAR B QUE Sauce for Smoked Meats I I 1 onion finely chopped 2 oil oilI I 2 oz 5 bottles Wor Worcestershire Sauce Lea Perrins 2 regular size bottles catsup 1 lemon sliced I 2 cloves garlic halved I 1 bay leaf leaC Saute onion in oil until soft Simmer all Ingredients with onions Serve I with smoked meats This sauce Is not to be used for basting I 1 r i I Hot Mustard Sauce I I I 3 tsp dry mustard I I 2 brown suga sugar I II I 1 flour I 4 I cup wine vinegar I I 4 1 cup boiling water I I Yellow food coloring I I Blend mustard and sugar together Add remaining ingredients Cook I I lover over slow heat stirring constantly for 3 or 4 minutes or until sauce I II I thickens Delicious for ham or smoked meats I J L r r I BARBECUE MARINADE I Ii I II I 1 cup vegetable oil oilI I cup vinegar for or dry sherry l 2 soy sauce I 1 tsp Worcestershire sauce 1 tsp garlic powder Several twists of the pepper mill millI I Combine all Ingredients in a polyethylene bag Add the meat meal tie I securely and place in a pan in case the bag leaks ll If used to marinate I roasts place in the refrigerator for one or two days it If steaks allow at al alI I least four hours if fish or chicken at east east two bouts houn Turn lurn bag several times during marinating time lime I 1 rr wr I CORN DUGS DOGS I I I 1 0 cup cornmeal 1 cup flour II tsp baking powder r 1 tsp salt l 4 I 1 egg slightly beaten 2 tsp fat Cat or oil ls c cf f ii cup milk 1 pound boiled first firstI I Combine the dry ingredients Combine the egg and oil with the milk Add to the dry ingredients and mix well Insert wooden skewers into the cover the with the corn meal mixture and fry in deep fat until golden brown Serve with mustard or chili sauce Children are very fond of these and like the leftover mixture dropped by a spoonful into
