VEAL CHOPS 6 veal chops, cut to inch thick i 3 tablespoons enriched flour 2 teaspoons salt 1-8 teaspoon thyme 1-8 teaspoon red pepepr 1 clove garlic 3 tablespoons lard or drippings 1 lemon, sliced cup water 1 teaspoon Worcestershire sauce 4 whole cloves Dredge chops in flour seasoned with salt, thyme and red peper. Rub frying-pan with cut clove of garlic; add fat to frying-pan. .Brown chops slowly on all sides. Place a slice of lemon on each chop; add water, Worcestershire sauce, cloves and bay leaf. Cover closely and simmer about 1 hour. 6 servings. |
