There are two main techniques for pickling. In one, vinegar preserves the pickles, shortening the process from several weeks to a single day. Pickles preserved in vinegar are not as crisp as those made from the longer process although the flavors and color are the same. The traditional method involves fermenting pickles, causing lactic acid bacteria to produce lactic acid from the sugars in the vegetables. If pickles are soft or slimy, they are unfit to eat and should be discarded. DILLY BEANS lbs. green beans 6 tsps. salt 3 cups vinegar 3 cups water 1 tbsp. dill seed 18 whole black peppercorns (or 1 Vt teaspoons hot red pepper, crushed) 4 Wash the beans thoroughly and cut them into small pieces (or use whole small beans). Combine the salt, vinegar and water and heat the mixture to boiling. Pack the beans into hot, steilized jars. Add teaspoon dill seed and three whole peppecorns (or teaspoon hot red pepper) to each jar. Fill the jars with the boiling vinegar mixture to within inch of the top. Seal, following the manufacturer's directions, and process the jars in a boiling water bath for 20 minutes. Fermentation can take months for some recipes. Distilled white vinegar keeps the original color although you may want the flavor of cider vinegar. Do not boil vinegar solutions for a long time, as they can lose some acetic acid. Use fresh spices. If they are to be removed before pickles are placed in the jars, tie them loosely in a square of cheesecloth. Use granulated cane or beet sugar. Brown sugar may be used, but it will result in a darker color and stronger flavor. Soft or hard water can be used. The recipes that follow have been carefully balanced for safety. Do not change the proportions. Use only utensils made of unchipped enamel, stainless steel or stoneware. Utensils made of metals such as zinc, iron, brass, aluminum, copper or galvanized steel may react unfavorably with the acids or salts used in the recipes and may make pickles unfit to eat. ' Wash and rinse canning jars, lids and bands. Place good-qualit- peppercorns. Fill the jars with the boiling vinegar solution to inch of the top for inch quarts (or for pints). Seal them according to the manufacturers directions. Process the jars in a boiling water bath. Pints or quarts containing whole, large cucumbers should be processed for 10 minutes.
