An old dressing-roolocker was just right and picked up on surplus. Right here, he cautions that a spot should be chosen in which to locate the smoker since they usually arent very attractive. Old refrigerators are also popular containers. Of course, a smoker is located outside so .that fumes won't make the house smell like smoked fish or sausage. His next sten was to add hooks in the top for hanging sausages, which would also be good for jerky, hams, n etc. Then he added racks for tish and other meats.it is important to use racks that wont discolor or flavor the fish, or chrome or stainless steel are best. Old oven racks are usually available at appliance stores or junkyards. As to keeping a fire going continuously in the smoker, he purchased a simple automatic charcoal lighter. This would quickly burn up if kept at high heat, gallons water (very cold) pounds (8 cups) salt 1 pound dark brown sugar 1 cups lemon iuice 2 tbs. liquid garlic 2 tbs. liquid onion Leave in brine for 18 hours, keeping it at a low temperature. Throw awav the brine since it will have replaced the water in the fish and will be diluted. Place in smoke;. Wood used in smoker can be any on which edible products grow: walnut, hickory, apple, trees cherry, etc. with the exception of (unless you like your fish to taste like Pine Sol, he adds). Smoke for approximately 18 hours for pansize trout or similar fish. Some people prefer them softer and some crisper, so check for what you want. Larger fish will also take longer. in BC Vacationing at the home of Mr. and Mrs. Don Call in Brigham City are their and daughter Mr. and Mrs. Gary Castleton and eight children of San Jose, Calif.
