A balanced breakfast is a must for good health. It should contain all the basic nutrients high quality protein, some fat, carbohydrates, minerals and vitamins. Eggs, one of nature's finest protein foods, are particularly suited to the breakfast menu because of their delicate flavor, quickness and ease of cooking and high quality protein. One egg for breakfast is fine but better yet two eggs. Two eggs will furnish one-fifth of the day's protein need. They help also to balance the breakfast meal not only with protein but also with important vitamins, minerals and lonie fat. Not pictured but a necessary addition to this breakfast would be fruit in some form. This entire meal may be prepared in about twelve minutes. While . the eggs are cooking, the coffee is perking, the muffins are being warmed and the fruit is prepared for service. To be sure that eggs are at their best, use moderate to low cooking temperature. Take your choice of the methods given below. Note that in both methods the eggs are cooked below the boiling point. Soft-Cooked Eggs Cold Water Method: Place eggs in pan covering completely with cold or lukewarm water. Bring rapidly to boiling. Turn off heat and if necessary set pan off burner to prevent further boiling. Cover and let tand 2 to 4 minutes depending on individual taste. Cool eggs promptly in cold water for several seconds to prevent further cooking and to make them easy to handle. Boiling Water Method: Bring water in pan to rapid boiling, using enough to cover eggs completely. Meanwhile warm very cold eggs slightly in warm water to avoid cracked shells. Transfer eggs to water with spoon, turn off heat, and if necessary set pan off burner to prevent further boiling. Cover and let stand 6 to 8 minutes. Cool as above. |
