If you are expecting a friend to visit you for several days you can always arranga a cozy llttlo tea. Thin slices of lemon, cream and sugar should always be served with hot tea. At formal teas coffee or chocolate are served aa well as tea. Sometimes in warm weather Iced drinks or punch may tuke tho place of hot drinks altogether. Sandwiches must he very thin and dainty, and cut Into fancy shapes if you wish. Your left-over muffins or biscuits can be broken into halves, toasted and buttered and served with marmalades or conserves. Jleiim for Informal Teas. (1) Toasted marmalade sandwiches, nut sandwiches (on dark bread), angel food or plain sponge cake, tea, mint candies. (2) Toasted raisin muffins, strawberry straw-berry Jam or spiced honey, tea, cookies, salted nuts. (3) Fruit and nut bread sliced thin, toasted and buttered soda crackers (If you wish), preserves or Jam, layer cake, tea. Orange Sugar Wafers (For teas; makes about 60) S cups Drifted Snow Flour, 1 teaspoons tea-spoons salt, 1 cups sugar, H teaspoon tea-spoon nutmeg, 2-3 cup shortening, I eggs, 1 tablespoon orange Juice, grated rind of one orange. Sift together flour, baking powder, salt and nutmeg. Cream shortening and sugar and add well-beaten eggs. Add orange rind and Juice then flour mixture. Chill dough for about an hour in refrigerator. Roll out to about one-fourth Inch thickness on ll&htly floured board and cut into cookies. Use fancy cookie cutter if you wish. Sprinkle with sugar and bake at 350 degrees F., moderate oven, for 10 to 12 minutes.
