Thi3 quick bread combines those old salad favorites pineapple and cheese with chopped walnuts for crunchiness and good flavor. It goes together simply and without fuss. The technique is the same as for muffins. Pineapple Cheese Bread 2 cups sifted all-purposo 1 cup crushed pineapple flour , 2 tablespoons melted shortening cup sugar ' 1 large egg 3 teaspoons baking powder cup grated sharp ; y2 teaspoon soda Cheddar cheese ! 1 teaspoon salt Vz cup chopped walnuts ' Sift together flour, sugar, baking powder, soda and salt. Stir crushed pineapple and shortening into lightly beaten egg. Add dry mixture to egg and pineapple. Stir quickly until all is moistened. Lightly stir in cheese and walnuts. Turn into greased loaf pan (9 x 5 x 3-inches). Bake in moderate oven (350 degress F.) about 1 hour, or until browned and cooked completely through in the center. (Use 325 degrees F. for glass loaf pan.) Cool completely before cutting. Flavors are better next day. |
