The cooling process in common storage is slow, especially when apples are stored in boxes and the circulation of air is not very good. If stored while yet warm from the sun's rays, the ripening rip-ening process may continue rapidly for some time, until complete cooling has taken place in the cellar. The grower can overcome this difficulty very rapidly by leaving the apples of one day's picking In the field overnight, over-night, and moving them to the storage cellar early next morning before they have hnd time to get warm. The cool fall nights provide a thorough cooling cool-ing of the apples, and they are in excellent ex-cellent condition for storage. |
