Apparently these Europeans are batter acquainted titan Americans with the value of dandelion greens as food, or they have less objection to the characteristic bitter flavor of the lenves, or know how to overcome !t. Dandelion greens are useful in about the same ways as other green leaf when properly vegetables, cooked, which Is tho shortest possible time, or not at all. They supply vitamins and needed minerals, and those who are accustomed to their flavor find that they ufl'ord an agreeable change. Many methods of preparation have been tried to modify tho bitter flavor of dandelion greens. Raw dandelion leaves or those cooked without water are less bitter than those that have been boiled. Vinegar or acid dressings help, and so do foods of strong flavor, such as celery and some meats. Crisp salt pork or bacon is frequently served with dandelion greens for tills reason. Blends of dandelion and other greens are better titan the dandelion alone. Chop or dice the pork and fry crisp; drain off all hut two or three tahlespoonfuls of (lie fat. Cook the dandelion and cabbage together In the fat after removing the meat. Stir constantly for three minutes, senson, mix with the meat, and serve. Dandelion and Turnip Greens Boiled Mutton. With pints dandelion Salt, pepper 2 leaves tablespoonfuls melted mutton pints turnip or butter fat greens ti lb. ( cupful) 4 tahlespoonfuls diced boiled inut- fine sifted ton crumbs (may be emitted) cup strong mut- ton broth 2t I.oil the greens in tml.-s- d water to cover for 10 minutes. Drain, mix with tlie ertoked meat, broth, fat, seasonings and crumbs. Cook for a minute or two and serve. Dandelions In Blends. Edmonds, manager of the Utah Poultry Producers cooperative, is that the total addition of baby chicks to Utah poultry flocks this year will exceed last years figures by at least 250,000, possibly more. Draper and American Fork, two of the state's leadng poultry communities, Mr. Edmonds reports, are placing unusually large orders, while Morgan county, typical of the newer poultry regions, which he visited last week, "is all tuned up to produce more eggs this year." Action of the coal in a home furnace was responsible for a sample being forwarded to State Chemist Herman Harms for determination. The result indicated that the coal was of a coking character. Further tests from samples taken from three faces in the mine were made by the bureau of miiles with similar results. Then a sample was forwarded to the Koopers laboratory, Pittsburgh, and former determinations were confirmed. The Hoppers report contains the following comments: This coal exhibited definite coking properties in the laboratory test, but is of such unusual quality and the volatile matter is so much higher than the usual extreme range for coking coals that we would not feel justified in making a definite prediction on coking behavior from the laboratory test. We would recommend that a sample be forwarded to the Chicago Coke company for a box coke test. "The were very satisfactory, the ash, sulphur and phosphorus contents being remarkably low. The coal is of coking type, but a box coke test is desirable to determine the structural quality of the coke. Supplementing the scientific reresearch, C. N. Sweet, president of the Sweet Coal company, erected a small behive oven at the mine and during the past week has been conducting some tests of a practical character. Samplers of coke made in the test oven were brought to Salt Lake Saturday and further confirm the opinions regarding the coking properties of the coal. Deposits of coking coal are rare In the west. Only two have been developed in Utah, one by the Utah Fuel company at Sunnyside and the other by the Columbia Steel corporation at Columbia, both in Carbon county. Because of the rarity of coking coal, the development of Utahs iron resources was delayed a number of years. FIRE RAVAGES CHURCH SCHOOL SAY BAYER Salt Lake City. Damage estimated at more than $50,000 was caused early Friday morning when fire swept through Converse hall, administration building of Westminster college, on Thirteenth East street. Two firemen were slightly injured in a fall of eight-teefeet when a ladder, overloaded with men and hose, broke. Foreman Iloshard suffered a fractured rib and Conde sprained his left ankle. Efficient work of the fire department and efforts of the Westminster students from adjoining dormitories saved educational and business records of the college and part of the class room equipment, but the colleges entire library of 14,000 volumes, including the private library of Dr. William M. synodical missionary and former pastor of the First Presbyterian church, was completely destroyed. The Paden library was regarded as one of the finest private collections in the west. The fire, which spectacularly illuminated the early morning sky, Is believed to have been caused by spontaneous combustion. The blaze swept upward along the main staircase leading from the main floor to the upper floor and superstructure or Gothic tower, which adorned the Converse building. Firemen were able to control the flames to the two upper stories and the basement floor, containing the chemistry, physics and laboratories, was undamaged other than from water.
