Show h h (a CLEAN MILK The producer of milk and cream has a greater influence upon the quality 'of manufactured dairy products than is appreciated ap-preciated by him. Heavy losses are inflicted in-flicted upon the dairy industry due to the improper handling, of milk which could be prevented if all producers would observe ob-serve a few simple principles in the production pro-duction of milk. The most important step in the production pro-duction of clean milk is the utensils. If they have been properly washed and scalded and then put in a sunny place to thoroughly air and dry, the first step to clean milk production has been taken. The next is to thoroughly cool the milk as soon as it is produced. A wonderful saving would be made if all milk could be cooled, after milking, to a temperature of 50 degrees Fahrenheit or less. The next important step in the production pro-duction of clean milk is clean methods of milking. If the udder of the cow is slightly slight-ly soiled it is a good practic to wipe it with a damp cloth or to carry a brush for removing loose dirt. Much butter and cheese are sold below the highest quotation because the producers pro-ducers have failed to deliver good milk to the creameries and cheese factories. Low prices paid for low quality of dairy products are not in themselves the worst . penalties inflicted upon those who manufacture manu-facture such products, but rather the low consumption which low quality causes. caus-es. There is no question but there would be a larger consuuption of cheese if it were uiuiormry 01 nigner quality, rne milk producer must appreciate that he has a responsibility in the production of high quality daily products and that he cannot escape the penalties of low quality qual-ity daily products. To produce good daily products requires good milk and good workmanship upon the part of the manufacturer. manu-facturer. It is, "therefore, a cooperative effort and the producer must feel that his part is quite as important as that of the person who handles his products. - Hoard's Dairyman. u a, t. |
