Show EAT, BIT DO NOT WASTE POTATOES How to Prepare Potatoes Without any Waste is Told by Conservation Conserva-tion Experts. Eat more potatoes and save wheat, does not mean to waste potatoes Many housewives who would be indignant in-dignant if accused of wasting potatoes pota-toes are actually throwing away daily much of the valuable material and protein content of the potato because they pare the potato too deep. Some very valuable suggestions on the preparation prep-aration of potatoes for the table in order to avoid waste have been prepared pre-pared by the Extension Division of the Utah Agricultural College. These are in part as follows: "If potatoes are to be pared but a very thin layer should bo removed, as much of the mineral and protein content is directly beneath the skin and is lost in deep paring. Potatoes are best boiled with their jackets on, steamed, or baked. Prepared thus there is no nourishment lost and the flavor is best. When potatoes are to be baked, the skins may be eaten, as they are rich in mineral. Baked potatoes po-tatoes are the most easily digested because the starch has undergone a stage of digestion in the baking. "Potatoes should take even a more important place in the diet than they ever have as they are an excellent substitute for wheat flour when used with other nourishing foods as dairy products. They are cheap and easily digested." Baked potatoes are best when cook-id cook-id as follows: "Wash skins with vegetable brush. Use smooth skinned, medium, uniform size potatoes. Bake in a moderate oven. If cooked very slowly they are soggy; if cooked in a hot oven, a thick layer is formed over the potato. The contents may be removed and mixed with cubed meat, sauces, hard cooked eggs, cheese, fish, etc., then replaced and heated or just eaten with sauces or fat, as dripping, butter, etc." Conservation Hints from I'.
