There is a marked difference between be-tween the kind of prepared poultry different markets demand. For instance, in-stance, New York is not very particular particu-lar as to whether its dressed poultry poul-try comes scalded or dry picked. Many of the western cities think the same if the poultry be nicely prepared pre-pared and fowls of the same size are packed together, the yellow and white-skinned white-skinned packed to themselves. Boston Bos-ton strictly wants its dressed fowls dry picked, Chicago likes its turkeys dry picked, but prefers chickens, ducks and geese scalded. |
