Show It Makes Cents By VI JUDGE BLAKE Dear Vi: Here are some of my favorite cooking shortcuts: Instead of making round biscuits, roll out the dough and cut it with the dividers from an ice cube tray. Or, if you want larger biscuits, simply cut the dough in squares. Who said biscuits must be round. Spray broiler racks and pan with a non-stick product before use. The cleanup job will be amazingly simple. A little water in the bottom of the drip pan keeps the grease 1 drips from smoking. Also, leave the oven door open partway when broiling meat. Poach eggs in buttered glass ovenware custard cups. Place cups in about an inch of water in a pan with a tight lid. Serve the eggs in the same cups. To boil cracked eggs, put them in cold water with a teaspoon of salt. Boil gently for ten minutes for hard boiled eggs. This keeps the whites from leaking out. A Faithful Reader, Richfield, Utah Dear Readers: The other day, I found a recipe for salad dressing that is as' smooth, fluffy, and delicious as any of the well-known brands I have ever used. I could hardly wal to share it with you COOKED SALAD DRESSING Put an egg, 2 tablespoons sugar, one and a half teaspoons salt, a scant teaspoon dry mustard, a little paprika, a fourth cup vinegar, and three-fourths cup salad oil in your blender. Don't stir. In a small pan (or bowl if you use the microwave) makes paste of a half cup water and a fourth cup cornstarch. Add another half cup of water. Cook over low heat, stirring constantly until it thickens and becomes clear. (Stir once for microwave cooking.) Add hot cornstarch mixture immediately to ingredients in blend and whip until thoroughly blended. Cool before serving. Makes one pirn. (This can be whipped with a rotary beater, wire whip, or in your mixer.) If you like a zestier flavor, add other spices such as garlic powder, onion, etc. Dear Vi: i We have noticed out-of-order signs near the doorbells of several homes we have visited lately, When our bell stopped functioning, my husband tested the switch button by removing it from its mounting and testing it by simply running the blade of a screw, driver across the two wires. If this makes the bell ring, the button is at fault. Otherwise, test the transformer near the switch box and finally, the chime or bell itself.
