Show LOCAL CANNERIES IN OPERATION brigham factory turning out 30 thousand cans tomatoes a day crop the largest ever the north plant of 0 the brigham city canning company Is in tull full swing these days taking care of the ripe tomatoes in the brigham district the tomato acreage Is considerably greater than that of 0 previous years and the th crop is the largest ever grown in this community according to manager john L pierce of 0 the local canning company at the present time the local cannery Is ig receiving about 2400 bushels of 0 tomatoes dally daily and turning out approximately cans of 0 tomatoes and 2000 gallons ot of puree ar or tomato product to be used in making soups icat stiv etc the company is employing some sixty five girls and women and forty five men the girls are paid seven cents a bucket for peeling tomatoes and peel from 23 25 to 35 85 buckets each per day J frank bowring is foreman at the cannery and an miss iniss lapreal wight secretary is timekeeper and their efficient work is appreciated precia prec ted by manager pierce the process of canning is most interesting te when the tomatoes reach the factory they are dumped into a large washer and thoroughly cl cleaned As they pass from the washing process they are inspected by three women and all bad tomatoes are removed and thrown into a receptacle the discarded tomatoes tor for which the growers are paid by the canning company amount to about two tons per day the good tomatoes then pass through a large vat and are scalded so the peeling can be easily removed Tb eyare then placed in pans and conveyed to the department where they are peeled in each pan of peeled tomatoes the girl doing the work places a ticket bearing her number and later as the tomatoes reach the place where they are put into the cans these tickets are collected and the girls given credit according to their numbers after the tomatoes are placed in the quart cans they pass through a steam vat the tops are then sealed er on and they pass into a large agitating cooker it requires six minutes and 19 seconds for each can to pass through the cooker which is ot of sufficient capacity to handle cans per minute they are then boxed and sent into the ithe labeling department and from there to the storehouse or loaded into the cars tor for shipment the work of canning tomatoes is done in a most cleanly way and everything about the factory is sanitary and spotlessly clean nowhere on earth could tomatoes be canned in a more sanitary and pure condition the canneries at perry and willard which are arc operated in a similar manner to the brigham cannery are working at full capacity and each institution is is turning out a splendid product W 41 |
