the first speaker friday night was J A ward of willard president ot of the county farm bur bureau eau who stated that after talking with prof merrell he was undecided about the erection of a creamery in box elder county at this his stage of the game county I 1 agent R H stewart expressed his pleasure in having prof merrell here to discuss these questions president russell wight wi of the commercial club p presided resided and introduced the speaker prof merrell delivered a real educational talk which is sure to result in much good in this community he pointed out the needs of box elder county and how to proceed to benefit conditions here before closing he advised the farmers to get the cows first and then talk about organizing orga nizine a local creamery and those who listened to him were convinced that he was right ten years ago he said there were 41 cooperative creameries crea meries in utah there are still a few left one of them down in southern utah new machinery installed years ago and not a can of the past few years he said marketing conditions have changed in the dairy industry large companies have been organized with competent sales forces and markets established everywhere the price of butter tat today is 55 cents in salt lake city and two condensing factories in cache valley are closed because there is no milk and the local creamery at wells ville valle is now being operated by a lo 10 loal al corporation and cannot pay the price for products the larger corporations corpora ons pay As a cooperative creamery it too was a failure he said such an organization here should be a county affair and there is already a local creamery at tremonton Tre monton why pay money for more machinery and men to 0 operate another plant increasing the overhead expense and not enough cows or milk in the county to wet a eburn churn he said his addiso in this matter was for the farmers to spend money for goo cooj dairy cows build up the herds berds with good blood produce the supply of milk and then it is time enough to talk about building a creamery are his statements correct if so the farmers of this community should spend their efforts in securing cows rather than buying machinery erecting buildings to pay taxes on espee ally as lone ion as there is a market for all they can produce to do otherwise would be getting the cart before the horse the dairy industry said the speaker is now international and is thi the safest and nd roost most scientific industry in the world he explained that milk is the natural food and has a relationship to public health it was his opinion that many diseases are caused from an unwholesome diet and that children especially do not get the amount of milk that nature requires there is less than seven tenths of a pint of milk consumed per capita and yet milk is natures food and the surprising thing he said is the fact that in utah where the people have been taught the word vord of wisdom the people consume more coffee than any state in the west he said it was important that parents provide more good milk for the children it if they expect them to grow up with a healthy body for cooking purposes said prof mer merrell rell there is nothing to equal evaporated milk which is a utah product and is in demand on the eastern markets but here in utah we do not appreciate these dairy products candy manufacturers are now making delicious chocolates from evaporated and condensed milk instead of using lard and other materials and when buying candy people should domand demand milk chocolates it was his opinion that the alfalfa weevil was a blessing to utah it meant a quarantine on utah alfalfa and the fa farmers were then compelled to teed feed this hay to their cows in wisconsin he said a ton of utah hay at was worth two tons of Wis wisconsin congin alfalfa but here again we do not appreciate pre preci clate ate our own products there was one and one half million pounds of butter and cheese shipped into utah last year carloads of it going to carbon county every year utah is paying millions of dollars to kansas farmers for hogs the dairy cows of wisconsin produced for that state worth of dairy products in one year he said in utah there is less than dairy cows when ten years ago there were producing milk and butter what good are creameries crea meries
