Show B9 Castle Valley Review, February 2009 Meals to Make you Feel Right at Home Kathy Ockey The wonderful aroma and welcoming atmosphere make you feel as if you are coming home when entering the Jack and Joyce Woodward’s house in Price. Joyce said they have lived in their home nearly all their married lives and raised four sons there. They now have 25 grandchildren and five greatgrandchildren. Joyce said she and her husband were both born and raised in the Price area and she attended LDS Business College while Jack went to Utah State, majoring in physical education. They married in their last year of college and Jack went into the Marines. When it was time for him to be released there was a job opening for a basketball coach at Carbon High School and he applied for and obtained the position. He coached basketball there for 25 years and also assisted in football and baseball. Joyce worked as the secretary at the Institute of Religion and also worked concurrently for the Area Director of Seminaries and Institute. Joyce said she loved working with the students and did a lot of cooking for them, “This is where I learned how to cook in big quantities, along with cooking for four hungry sons.” Joyce said she likes to cook but “I’m not a gourmet cook. I like to keep things easy because it seems like there is always a ‘time crunch.’” She also said she clips recipes like a lot of other cooks but she learned from a friend to keep the recipe on your counter for two weeks and if you haven’t tried it by then to throw it away. Joyce has many recipes and has received some very good ones from several of her friends including: Clara Lee Bowden, Sandra Johnson, Dorothy Bunnel and Virginia Noyes. She said she also has recipes she has “had around forever because if your family likes it you use it over and over again”. Following are several excellent recipes Joyce is sharing with everyone: Sour Cream Potatoes (Recipe from Clara Lee Bawden) (If you want to make this a main dish instead of a side dish you can add cooked ham or chicken to the potatoes before baking) 1 package frozen shredded potatoes (bulk size) Mix the following ingredients: 2 cans cream of chicken soup 1 16 ounce carton of sour cream 1/4 cup onion flakes Salt and pepper to taste 2 cups shredded cheddar cheese Heat soup with 1 square of margarine or butter and stir remaining ingredients into the shredded potatoes. Place in large baking dish, cover with foil and bake at 350 degrees for 30-40 minutes. Sprinkle an additional 2 cups cheese on tope and bake uncovered another five minutes. Stir in 12 ice cubes to chill and start to thicken jello. Use more ice cubes if needed to start jello to thicken and then discard any left in the jello. Fold in 6 to 8 ounces of yogurt- vanilla or a flavor to match flavor of jello used. Fold in 8 ounces of Cool Whip and refrigerate until fully set. Lime and orange were favorites and you can add mandarin oranges or bananas if desired. It is great just plain. Mix red or green grapes, or a mixture of both into a bowl, according to how big you want to make this salad, You can add chunk pineapple or bananas to make a larger amount. Add one cup of slivered almonds. Mix one 8 ounce package of cream cheese and one small bottle of marshmallow cream and then add an 8 or 12 ounce carton of cool whip. Fold in the grapes and or other fruit. Raspberry Tarts Recipe from Dorothy Bunnell Tater Tot Casserole “Quick and can be prepared ahead of time” Put a two pound package of tater tots in baking pan. Brown 1 pound hamburger, 1/2 cup chopped onion, and 1/2 cup chopped celery. Mix 1 can mushroom soup and 1 can of canned milk and add to meat. Pour over tater tots and sprinkle with 2 cups shredded cheese. Bake at 350 degrees for 30 minutes. Chicken in a Browning Bag with Mashed Potatoes and Saute’d Veggies 1/2 Cut-up Frying Chicken, thawed with as much fat removed as you can. 1/2 Package Shake-n-Bake (or one whole chicken and a full bag of Shaken-Bake) Place in a browning bag, shake well, add a couple tablespoons of water, and loosely seal the bag so the steam pressure escapes and microwave for approximately 20 minutes, depending on the power of your microwave oven. Meanwhile: Make 1 cup of mashed Gateway Lanes g Open Bowlin potatoes according to the package instructions. While the milk and/or water is heating, lightly sauté’ 1/3 cup frozen mixed veggies in 2 teasoons low cholesterol margarine in small frying pan for about 3-5 minutes. Do not over cook. Remove the chicken for the microwave and carefully open the bag, being cautious about the steam. Place 1/4 chicken and some of the gravy over the mashed potatoes and serve with the veggies. Retain the other piece of chicken for a snack or tomorrow’s lunch. Entire meal takes about 25 minutes. Here is the best part. After removing the bag from the microwave dish, simple put the dish away. Roll out pie crust and cut with a round cookie cutter or glass into a 3 or 31/2 inch circle. Press into a muffin tin or tart tin. Put one tablespoon of raspberry jam on pie crust. Mix a white or yellow cake mix according to recipe on box. Cover jam with ¼ cup of cake batter. Bake at 350 degrees for 15 minutes or until cake is done. Cool for a few minutes then remove carefully from the pan by sliding a plastic knife around the edge and lift the tart out. When cool, frost with a simple powdered sugar glaze or frosting: three cups of powdered sugar and add enough water to make either a glaze of frosting. Add a drop or two of almond flavoring. Grape Salad “This is a family favorite” Mushrooms Mushroom soup Celery soup Cheese soup (doubles as cheese sauce) Tomatoe sauce Tuna Flavored beans (eg. Bush’s or Stags) Prepared Items: In small portions, labled and frozen, typically about 1/2 cup. Mild Chili, ½ cup Mild Spaghetti sauce, ½ cup Macaroni & Cheese, 2 cups Sausage or Country Gravy One of my favorite quickie meals is Chicken in a Browning Bag with mashed potatoes and gravy.
