Show -N E W S- Spanish Fork Covering what matters most Benjamin group takes a cruise 'Round and About Benjamin Kathleen Olsen A baby girl was born to Cody and Tracie Bradford on Thursday, Jan. 17, 2008, at Utah Valley Regional Medical Center in Provo. The little girl whose name in Brinlie Jean is being welcomed home by one sister and two brothers. ••• Verd and Rosalee Singleton spent a recent weekend in St. George, visiting with Glen and Blanche Hawkins. Along with helping with a few projects, they enjoyed visiting and seeing the historical sites of the area. They were also able to visit with Gary and Diane Beckstrom Bradford and Robert and DeNene Jensen who stopped by (Diane, Robert, and DeNene are all former residents of Benjamin). Verd 'and Rosalee were also able to visit with Rosalee's parents in Cedar City. ••• A group of Benjamin residents, along with other family members and friends, spent partof January enjoying a Carribean cruise. The group flew to San Juan, Puerto Rico, where they boarded ship and during the following days visited different ports of call including Barbados, St. Lucia, Antigua, St. Thomas, and Tortolla, before returning to San Juan. Some did scuba diving while others enjoyed snorkeling, in addition to visiting the sights of the various stops. They also observed birthdays of several in the group and held a special fireside where they were joined by other LDS church members who also happened to be on that particular cruise. Those from Benjamin included Lloyd and Clarice .Nilson, Riley and Eva Prestwich, Clay and Bonnie Foy, Greg Foy, Glen and Tonie Thorpe, Andy and Chris Caras, Ben and Allison Young, and Ashley and Sonja Guy. The Nilsons served as the coordinators of the group. Everyone arrived safely back home, despite encountering rough weather resulting in some delays. ••• The LDS World Wide Training will be held on Saturday, Feb. 9, 2008, at 3 p.m. at the stake center. All members, 18 and older, are invited to attend. ••• This January has seemed long with many cold and dreary days. There are blessings with the weather because we are in dire need of the moisture laden snow but sometimes, we need to work to keep our spirits up. We've asked several people what.they do to get through this month happily; and some of their responses are as follows: read a good book, do a project that there's not time to do in warm weather, build a snowman, enjoy the winter sports (like sleigh riding or skiing), do something for someone else, invite people to your home, call someone on.the phone, put a puzzle together, smile and count your blessings. Grandma's Recipes Store beans Ready or Not Dawn Van Nosdol Beans are such a good item to store in your food storage because they are a healthy and satisfying food, they have ho fat (unless you add it) and they store well. You can either take the time to cook them from the hardness of a stone to the creamy texture we all know and love.— or you can open a can, like 1 do. Now don't get me wrong; beans are very easy to prepare, but you do have to think ahead to get them cooked in time for dinner. You can either cook them in a pot on your stove or you can cook them in a crock-pot — either way works really well. This week I am going to give you a white bean recipe. .My daughter, who is a selfprofessed bean hater, loves this White Chili recipe. She also likes the other bean recipes that my friends have given to us to try. Either she just hates beans when I cook them, or she just likes to say the words, "Eeeew, I hate beans, they're yucky." I'm going to go with the second reason; after all, I'm such a terrific cook. Okay, so I'm not as good as my friends are, but my food is still edible. My friend who shared this recipe with me is really good at finding good prices for food storage. She once bought a #10 can of Jalapeno peppers for only ten cents! She gave it to me and I'm still using it. This White Chili recipe is also a really good food storage recipe. You just need to have cans of white beans and corn, canned chicken broth or granules, and canned or frozen chicken. The onions and celery could be dried if you don't have access to fresh. Fresh cilantro would be nice, but you could use dried in a pinch. This recipe is called White Chili, but it is more like white bean soup. White Chili Serves 4-6 saute* until tender: 1 T. Butter or oil 1 med. Onion 2 garlic cloves 1 stalk celery Stir in and simmer 10 minutes: 3 C. chicken broth 2 cans white beans; save juice 2 T. fresh cilantro I !4 tsp. Cumin 1 can corn; save juice Mix until smooth, then add: 2 T. cornstarch Juice from both the corn and the beans (add water if needed) 1 T. lime juice (1 lime) Stir in 2 C. cooked chicken. Bring to a boil, then stir and simmer until thick. Next week I will share a black bean recipe that is just chock full of healthy stuff. I will also give you some more tips on preparing beans if you would rather buy them dried instead of canned: Beans are very easy to store when they are dried, but you do have to rotate them or they can get old and not cook up well. One reason that I like the canned beans is that I don't have to use precious water (two gallons, per person, per day for two weeks) to re-hydrate then) during a disaster that, and sometimes it is just easier to use a can opener to get dinner ready. WEDNESDAY, JANUARY 30, 2008 • A3 Media frenzy: From POLITICS • A2 out from there. I'm sure we would have some effect from such a disaster. If the water wouldn't reach here in Palmyra, all transportation would be lost because much of the valley would be flooded, plus all the emergency services would be put into full use. Then the loss of homes and businesses would be staggering. Plus, I'm sure many, would lose their lives. It's the possibility of an earthquake that I'm concerned about. If and when that happens, I will be glad that I don't live in the mountains, or on a hillside. I can't imagine what that would feel like. And, of course, there's no way of knowing when one would happen or how bad it would be. Back to all the media coverage of the presidential election. We've been listening to all this stuff for months now and there is just so much that the human brain can tolerate. It's almost like psychological torture, the same thing over and over again. Enough! I think they should pass a law that you can't do any campaigning until the beginning of the year of the election. That's oodles of time to harass the population and feed the media frenzy. The older I get, the more inclined I am to think that those "olden days" were the best. The electronic age has gotten out of hand, and it's probably only going to get worse. I don't know where it's going, but I don't want to go with it! . Here's your laugh for this week: The Golden Years. "Working people frequently ask retired people what they do to make their days interesting. I thought you might like to hear what happed to me last week. I went to the store in town the other day. I was only in there for about five minutes. When I came out thdre was a city eop writing out a parking ticket. I went up to him and said, "Come on, buddy, how about giving a senior a break". He ignored me and continued writing the ticket. I called him a Nazi. He glared at me and started writing another ticket for worn tires. So I called him a piece of horse hockey. He finished the second ticket and put it on the windshield with the first. Then he started writing the third ticket. This went on for about 20 minutes. The more I abused him, the more tickets he wrote! I've gotta tell you, I really didn't give a hoot. My truck was parked around the corner. I do try to have a little fun each day. You can make your own sweet yeast dough, but buying frozen | will save you time. no | 2 tbs. butter, melted 1/3 c. sugar | 2 tsp. cinnamon 1/2 c. finely ground nuts 290 N. Main Spanish Fork 798-3500 A'G'E'N'CiY On lightly floured surface roll dough into a 12x8 | rectangle. Brush with butter. Combine sugar, cinnamon and nuts together. Sprinkle mixture over dough and I gently press into dough. Cut into 12 strips (8"x 1 "). Twist each strip 2-3 time's I with cinnamon side out.
