It Makes Sense By Veda Hale Not many of us have the time or money to go running to a health spa every time we feel we are loosing health quality. The best idea to come my way suggests we make certain habit changes and then go on about life without having to think too hard. For instance, If you go to a fancy spa, they will feed you fresh ingredients and usually tout them as organically grown. In our small towns where we are at the mercy of whatever the produce truck brings to our store, we might find going strictly organic a problem. But we can go as fresh as we can by finding out when the truck delivers to our store and get there early and pick out the best looking fruits and vegetables. Now and then our stores get some exotics, like kiwi fruit, papaya, pomegranates and berries. That is fun to try, but I remember one old-time health advocate, Dr. Christopher, who always said "Eat under your own fig tree". He meant our bodies best assimilate nutrients that grow near us. If that is the case, it is one for the local gardeners. I have had a few things given to me by locals and have discovered some easy and good meals. For example, ever put a big red beet in the oven, I use a little George Foreman one"? Apieceoflocal hubard squash, a beet and a potato. ATTENTION FARMERS & RANCHERS Bring 50-gallons of used oil into a participating Used Oil Collection Center, complete the in-store form, and mail it to the Utah Division of Solid & Hazardous Waste to receive a REE PAIR OF LEATHER WORK GLOVES. For a list of participating used oil collection centers, please call 1-800-458-0145, or visit http://www.hazardouswaste.iitah.gov/ adobe/UsedOHCoIIectionCentersFarmers.pdf. FREE Beautiful color and nice and filling. Even a fancy spa could make a dish look special without too much trouble. Remember color is important. Let your eyes do the thinking. If it looks pretty, it is has a good chance of being nutritious. Another thing a spa will do is try to get you to be conscious of the portions you eat. Most will tell you to use your hand as a portable measuring tool. Well that is simple enough. We always have a hand handy. . A closed fist equals 1 cup of rice pasta or potatoes, (white colored food) A palm of the hand is about the size to think of when choosing meat, (brown color). A Thumb equals one ounce of cheese, and a tip of thumb equals 1 teaspoon of butter. A Cupped hand equals 1 ounce serving of nuts. Two cupped hands equals 1 ounce of chips or pretzels. Then to get the plate to really look pretty, add green vegetables—all you want. If you are trying to lose weight, then it is wise to get in the habit to trim off fat from meats. Another hint, put olive oil in a spray bottle for use in cooking and sauteing, instead of pouring a portion of 011 in a pan. You'll use less if you spray it, and add fewer calories to the recipe. One spray equals about 1/8 teaspoon of oil (about 12 calories from fat) These few habits aren't hard to acquire. But here is one the spas use that is worth working to acquire. Few of us make our own salad dressing. But if you are interested in replacing up to 90 percent of oil in salad dressing recipes, use thickened vegetable stock. 1 tablespoon corn starch mixed with one tablespoon cold water to thicken one cup of stock. Boil until the liquid clears and the starch is cooked. Cool and add to other ingredients in a blender. Use just a tablespoon of oil, along with favorite herbs and spices. It makes cents and sense, because good health is money in your pocket. Send suggestions to Veda Hale, P.O. Box 956, Panguitch, Utah 84759, or email vedahale @ hotmail.com ADVERTISE IN The used oil may not be mixed with antifreeze, pesticides, solvents, or any other substances and must be brought in durins normal business hours. *One pair of gloves per aujdress.
