Show Volume I , Issue XI Page 17 The OGDEN VALLEY NEWS August 1999 Five Generations Recipe of the Month Chocolate Chip Cookies 3 Ways A few changes to the ingredients of your chocolate chip cookies can make the difference between a crispy cookie and a soft one. If you use an all-butter dough, you will get a crispy thin cookie, because butter melts more quickly than shortening in a hot oven and the dough spreads. For a puffy cookie, use shortening to keep the dough from flattening. Get a softer cookie by sweetening it only with brown sugar. Combine brown with granulated sugar for a crispier cookie. Here are three different versions: Basic Chocolate Chip Cookies ½ cup shortening ½ cup butter 1 cup brown sugar ½ cup granulated sugar ½ tsp. baking soda ¼ tsp. salt 2 eggs 1 tsp. vanilla 2 ½ cups all-purpose flour 1 ½ cups semisweet (or sweet) chocolate pieces 1 cup chopped walnuts Thin & Crispy Chocolate Chip Cookies 1 cup butter ¾ cup packed brown sugar ¾ cup granulated sugar ½ tsp. baking soda ¼ tsp. salt 1 egg Standing: Barbara W. The public is invited to an open house in her honor which will be held August 21 at 1:00 p.m. Lori was born and raised in Ogden, Utah, and graduated from Weber State University with a degree in Elementary Education. She currently teaches fifth grade at East Layton Elementary. Lori’s appreciation for art was fostered by her mother, Betty Reed, who is a watercolorist. She served as Lori’s inspiration. Lori, who also works with watercolors and pastel chalks, reflects her love of nature in her paintings. Lori has been a student of Donna O. Kearney’s, a renown local artist, for the past eight years. She currently lives in Huntsville with her husband Todd, their one year old son Dylan, and her yellow lab Molly. 1 tsp. vanilla 2 cups all-purpose flour 1 ½ cups semisweet (or sweet) chocolate pieces 1 cup chopped walnuts Soft Cake-Like Chocolate Chip Cookies ½ cup shortening 1 ½ cups packed brown sugar 2 slightly beaten eggs 1 tsp. vanilla 2 1/2/ cups all-purpose flour 1 tsp. baking soda ½ tsp. baking powder ½ tsp. salt 1 8-oz. Carton sour cream 1 ½ cups semisweet (or sweet) chocolate pieces 1 cup walnuts Preheat oven to 375 degrees. For Basic or Thin & Crispy cookies, in a bowl beat shortening and/or butter on medium to high speed for 30 seconds. Add brown sugar, granulated sugar, baking soda, and salt; beat until combined. Beat in egg or eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer. With a wooden spoon, stir in remaining flour. Stir in chocolate pieces and nuts. Drop dough by rounded teaspoons 2 inches apart on an ungreased cookie sheet. Bake Basic cookies 8 to 10 minutes and Thin cookies 10 to 12 minutes or until edges are browned. Cool on wire rack. Makes about 60 cookies. For Cake-Like cookies, in a bowl beat shortening and brown sugar on medium to high speed until combined. Add eggs and vanilla; beat until combined. Combine flour, baking soda, baking powder, and salt. Alternately add flour mixture and sour cream to shortening mixture, beating after each addition. With wooden spoon, stir in chocolate pieces and nuts. Drop by rounded teaspoons 2 inches apart on ungreased cookie sheet. Bake 9 to 11 minutes or until edges are browned. Cool on wire rack. Makes 60 cookies.
