A few simple precautions at barbecue time will help protect your family and guests from bacteria, says a Stanford Medical Center nutritionist. Since the effects of food borne bacteria can occur anywhere from 20 minutes to six weeks after exposure. millions of Americans are affected each year by barbecue bacterial poisoning from a meal they may not even recall eating, says Jo Ann Hattncr. clinical nutritionist at Stanford Hospital and Ginics and a spokesperson for the - American Dietetics Association (ADA. Symptoms of food poisoning can include abdominal cramps, nausea, e vomiting, diarrhea or effects. The most important steps you can take to protect against food borne illnesses, including potentially serious salmonella or other harmful bacteria are to I) use a clean plate and cutting hoard 2) wash your hands frequently, and 3) use a thermometer to make sure you are heating the meat sufficiently to kill bacteria, Hattner says. One of the most common errors people seem to make is to pul the cooked meat or fish back on the same plate they used to cut the raw food br to carry it out to the grill. Putting it back on the used plate or hoard amounts to giving the cooked food a bacterial hath," says Hattner. Boards and plates should be washed in soap and water not just ripsed off. Replace cutting boards that contain major cracks, which can serve as breeding grounds for bacteria, Hattner advises. Using a dean plate is important, but Hattner notes that its equally flu-lik- SuiU i dllain Sheet xiE New Hours: MtHL-Ttellam-S- FrL-Sa- 11am t: -- 9 pm Even a I.itlle Exercise Will let Health Bcncliis. Any exercise is better than none," says Gordon Mathcson, pro- fessor of functional restoration, director of Stanford Universitys Sports Medicine Program and a team physician for Stanford athletic teams. Matheson says that the U.S. Surgeon General's Healthy People 2000 report calls for most people in accumulate 30 minutes of exercise almost every day to improve health. Matheson notes that accumulate is a key word. "Research shows us that the effects of exercise are cumulative everything counts. Continuous exercise is good, because it helps build endurance, hut health benefits are gained by finding small opportunities during the day for example, the stairs instead of ridwalking up the or elevator, ing parking at the hack of the parking lot to add a walk to tl)c daily routine," he it really matter if that 30 Does says. minutes is spent running up hills at a fast pace or walking briskly'.1 For overall health, the advantage to be gained from running up a hill vs. a brisk walk may be small. says Matheson. Of course, says Hattner. clean hands and a clean surface aren't going to help much if the bacteria remains in the meat after cooking, so its important to cook the meat hot enough to kill all the bacteria. A meat thermometer will take the guesswork out of ensuring your meats ate safe. Bacteria will be killed at temperatures above 140 degrees F, but consult recipes to determine if this is hot enough to cook food to proper "doneness." (For example, dark meat poultry isnt fully cooked until the temperature teaches 180 degrees.) Stick the stem of the thermometer into the thickest part of the meat, making sure the stem doesn't touch the bone. For thin hamburger patties, insert the stem sideways to the center. And don't forget to put leftovers in the refrigerator within two hours one hour if the outside temperature is above 80 degrees. Hattner says. The refrigerajor should be cooled to 40 degrees or lower to keep the cooked meat safe (and appetizing) for several days, she adds. - two-minu- te Administrative Assistant Summit County is currently recruiting for a full time Administrative Assistant for the Coramiaiity Devekxnent Department.
