All milk, whether in cartons, bottles, cans, or aseptic packages, is heated before being packaged. The heating process kills naturally-occurrin-g bacteria and extends the life of the milk. Pasteurization does not destroy all of these bacteria however, which is why pasteurized milk stays fresh for only a short period of time and must be refrigerated to slow down the growth of the remaining bacteria.
