If, however, you choose to purchase preground grains (for example, whole wheat flour or corn meal), stare the product in your home freezer until you need it., since grinding exposes the oils and the endosperm to oxygen and begins the process of decay. Cooking with whole grains may be a new experience for you. But take heart, because mankind has successfor fully used these ingredients generations. Cookbooks abound with many fine recipes for grains, .and once you get the basic preparation ' techniques down pat you'll find hundreds of ways to combine these edibles with vegetables, beans, dairy products, and spices. Many people feel that our nation, and the world, could have far more food available for the hungry if naturally occurring grains, instead of meat, were promoted for food use. Why? For the simple reason that it takes approximately ten pounds of grain to produce one pound of beef! In fact, about 90 percent of the com grown in the United States is grown as cattle feed. Worse still, the introduction and the promotion of beef as a food source in developing nations have created hunger and ecological crisis ... since land that was previously used for human food production or left in its natural state has been shifted into cattle feed production. This is not to say that we should never eat meat, but rather that we should consider the benefits of reducing our meat consumption to a reasonable level.
