being rewarded with mouthwatering displays of fresh produce If you are looking for ways to profit from that growing bounty consider a roasted salad as one of your options in using the colorful variety available This salad uses sweet beets red bell peppers green asparagus and mild shallots Walnuts roasted with the vegetables complement them adding flavor nutrition and crunch A citrus dressing gives a tangy finish The brightly hued beets are but are available year-roun- d approaching peak season so you may wish to look out for their different colors Besides the familiar red beets there are golden beets white beets and chioggia — also known or candy-can- e as candy-strip- e beets with alternating white and red rings inside The salad is suitable for indoor or outdoor entertaining with family and friends It’s a “heart-healthrecipe provided by the American Heart Association’s free “Simple y” Solutions" educational program for women which is sponsored by the California Walnut Commission Roasted Vegetable and WahnitJSalad 1 pound unpeeled small beets (6 to 7) 1 large red bell pepper 4 large shallots Vegetable oil spray 12 pound fresh asparagus ends trimmed (8 to 10 medium spears) r 14 cup walnut halves For the Dressing: 14 cup fresh orange juice 3 tablespoons plain rice I vinegar 1 tablespoon snipped fresh dill dr 1 teaspoon dried dill crumbled 1 tablespoon light brown sugar 2 teaspoons walnut oil 2 teaspoons grated orange zest (optional) 14 teaspoon salt 14 teaspoon black pepper Preheat the oven to 400 F Lightly scrub and thoroughly rinse the beets under cold yvater to remove any surface dirt Trim the stems Wrap the beets in aluminum foil completely enclosing them If you use different varieties of beets wrap each separately to prevent the colors from bleeding Put the wrapped beets on a large nonstick baking sheet Bake for 40 minutes Meanwhile cut the bell pepper in half Remove the stem ribs and seeds Cut each half into squares Peel the shallots and cut in half Unwrap the beets and return to the baking sheet Arrange the bell pepper and shallots in a single layer on tire baking sheet leaving room for the asparagus and walnuts to be added later Lightly spray the foods with vegetable oil spray Bake uncovered for 20 minch ' utes Arrange the asparagus and walnut halves in a single layer on tfie baking sheet Lightly spray the foods with vegetable oil spray Bake uncovered for 10 minutes or until the beets are tender when pierced with a sharp knife the other vegetables are tender and the walnuts are a light golden brown Put the baking sheet on a cooling I’d last had nut loaf a crunchy and savory dish that marries rich slow-roastnuts and seeds with a deep tomato base and the bite of balsamic vinegar My first exposure to nut loaf a staple of British vegetarian fare but relatively absent from American menus was when I first moved to Scotland and stayed briefly with a farmer and his wife She was a gifted cook who accompanied hearty vegetarian meals of produce fresh from the earth and breads hot from the oven with fruity berry wines her husband fermented in giant jugs in the pantry The most memorable of those meals was a meaty nut loaf served meat-loaf-li- with a mild mushroom gravy creamy mashed potatoes and braised carrots A hungry student with a huge appetite I ate half the loaf So inspired was I by this meal I insisted on having the recipe I scribbled it out on the back of a blank safe keepcheck tucked it away ing and promptly forgot about it Ten years later on a recent trip I found myself in a cozy candlelit restaurant in Bath England that had a surprising array of vegetarian offerings including nut loaf This was' my chance to recapture that memorable meal Or ft) I thought Thq “loaf” wasn't Rather it arrived at the table as a blob It was a tasty blob but still a blob It didn’t satisfy I wanted the firm slices of loaf I inhaled back on the farm ke ed So when I got home I dug out that old recipe determined finally to make it after all these years Of course there was a snag My hostess’ loaf was firm thanks to eggs which I no longa eat' My first attempt at the nut loaf got the taste right but the consistency was all wrong The nuts were too large and I doubt plaster neva mind egg would have held it together It is important to let the loaf rest after cooking fa Nut Loaf (Preparation 1 hour IS minutes) 1 cup peanuts raw and unsalted 1 cup sunflower seeds raw and unsalted 12 cup almonds raw unsalted 12 cup cashew nuts raw and unsalted medium carrot finely grated medium onion finely grated 1 medium apple finely grated 1 olive oil tabjespoon extra-virgi- n can tomato paste 3 tablespoons peanut butter 1 1 1 1 1 tablespoon soy sauce tablespoon balsamic vinegar tablespoon Worcestershire sauce (sec note) Preheat oven to 3S0 F Arrange the nuts and seeds on a baking sheet and dry roast in the oven for 12 to 15 minutes or until lightly golden Remove from the oven and allow to cool about 10 minutes Leave the oven on ' Once the nuts and seeds have cooled transfer them to a food processor and pulse until well ground and they form a coarse meal Transfer the ground nuts to the bowl of a standing mixer or a large mixing bowl Add remaining ingredients and mix until well combined The mix- - j 1 ture should be thick and sticky oil rubber a loaf pan Use a Lightly spatula to scrape the mixture into the pan and smooth the top Bake fa 30 minutes If the top begins to brown too much coyer with foil fa remaining baking time Remove the loaf from the oven and allow to set fa 15 minutes To serve! run a sharp knife along the edges of the loaf to separate it from the pan Place a large plate upside down ova the loaf and invert it to remove the loaf from the pan Slice and save Makes 8 servings Happenings AARR
