Show The Herald Journal Logan Utah Wednesday October (Janet Millard) IV cups sugar teaspoon teaspoon ground cinnamon teaspoon ground nutmeg IV cups cooked mashed pinto beans 1 egg beaten 2 egg yolks beaten 1 teaspoon vanilla extract all-spi- d pastry shell Combine sugar and spices in mixing bowl mix well Add beans egg yolks and vanilla mix until smooth Pour into pie shell Bake at 350 for 15 minutes Reduce heat to 300 and continue baking 45 minutes more or until set Let cool before unbaked 1 13 eggs one at a time beating well after each addition Combine flour cocoa powder baking powder and salt add to mixture alternately with yogurt stirring only until dry ingredients are incorporated Do not overmix Gently fold in chocolate morsels muffin cups Bake 15 to and nuts Spoon batter into paper-line18 minutes or until top springs back when lightly touched Cool in pan 10 minutes Remove from pan and cool on rack Serve warm or at room temperature Makes 1 dozen muffins Pinto Bean Pie 1 1 1 28 1987 serving So sorry I left a line out of the Health Nut Cookie recipe that appeared in last week’s food feature Yoko Eisner of Logan was the first of many to call me to ask how many apples carrots and eggs to use The original recipe calls for one of each I have reprinted the corrected recipe below Health Nut Cookies 44 cup oatmeal uncooked cup plus 2 tablespoons flour V Chocolate Bread Pudding flour cup whole-whecup cream of wheat uncooked tablespoon (equals IV teaspoons) baking soda cup peanut butter V4 cup plus 2 tablespoons sugar V4 cup plus 2 tablespoons brown sugar 2 tablespoons margarine at room temperature teaspoon vanilla 1 apple cored V (American Dairy Association) 4 cups French bread cubes crusts removed cup coarsely chopped pecans ch (6-- 7 slices) V V V cups milk 2 ounces unsweetened chocolate 3 eggs 1 cup firmly packed brown sugar 1 teaspoon vanilla extract Whipped cream casserole Place bread cubes and nuts in buttered Heat milk and chocolate in small saucepan until chocolate is melted Beat with hand mixer until chocolate is completely dissolved Meanwhile beat eggs and sugar until well blended Stir in chocolate mixture and vanilla Pour over bread and nuts Let stand covered at room temperature 30 to 35 minutes Preheat oven to 325 Bake pudding uncovered 30 to 35 minutes or until knife inserted near center comes out clean Cool at least one hour on wire rack Served topped with whipped cream Makes 6 to 8 servings IV Hello neighbors I have to keep reminding myself that it’s only October But with Halloween just a few days away I know that Thanksgiving which signals the official start of the holiday season is not far behind I'm pleased to already have a braided cheese bread on ice for Turkey Day Now if only I can continue to make things ahead of time and pop them into my inadequate freezer With the way the interior of the freezer looks already I doubt that we'll be able to have any ice cubes until January There just won't be any room left to waste on them if my schedule stays on track for the holidays I returned from vacation to find my desk piled high with holiday recipes plus decorating and entertaining ideas I also g found a very exciting announcement about a local cook Maurine Allen of Logan was awarded a grand prize in the Cream of Celery Soup category in the “Campbell’s Soup Makes Good Food’’ national recipe contest Maurine won $1000 for her Welcome Spring Pasta recipe More on Maurine and her recipe in the coming weeks The best packet of holiday recipes I received came from the Utah Dairy Council I’m surprised that it wasn’t tied with ribbons because of the chocolate recipes alone Chocolate Bread Pudding German Chocolate Cheesecake Double Chocolate Nut Muffins and Chocolate Peanut Butter Pie — what more could one ask?
