Show The Herald Journal Comics Theaters Outdoors Classfieds Logan Utah Wednesday February 12 1986 a Black Forest Trifle will be the grand finale of a sumptuous Valentine's Day dinner Jim Mitchell (left) and Bill Fillmore toast their valentines By Martha Dixon food editor To My Valentine — That’s the beginning of the special message wives husbands sweethearts friends will get on Friday Valentine’s Day This message of love and affection may come in several different forms: a card a box of candy or even a dozen red roses For seven lucky women in Cache Valley Valentine Day will be very special — and very different As an expression of their love the women’s husbands are preparing them a sumptuous dinner fit for queens These ladies will feast on Baked Salmon Supreme Enchiladas Suizas Clam Chowder Crab Stuffed Mushrooms Chlao Tzu Mini Meatball Ministrone Soup Cherry Nut Salad and a delightful Slush Topping off this wonderful meal will be Black Forest Trifle The recipients of this wonderful gift of a gourmet dinner are Terri Mitchell Mary Fillmore Elizabeth Taggart Karen Wiser Barbara Weiss Myra Lynch Patty Johnson Marie Godfrey and Jo Ann BerretL This idea one that nearly any woman would appreciate is the brain child of Jim Mitchell of Hyde Park Jim got the idea about 10 years ago when he and Terri were living in Florida As Valentine’s Day approached he began to think of ways to celebrate He thought ’’Why not honor our wives on Valentine’s Day?" The next question was how should the wives be honored? He hit on the idea of preparing with several friends a wonderful dinnerile talked to friends who liked the idea Each husband was to prepare a special dish and the dinner would be served at Jim and Terri’s home The dinner was an instant hit and a tradition was born When the Mitchells moved to Cache Valley where Jim is a teacher at the LDS Institute on the Utah State University campus Jim decided to continue the tradition of the special Valentine dinners Usually Jim invites seven to ten couples to participate in the very all the planning issues the Invitations and plans the decorations and the program Most of the husbands do very little cooking the remainder of the year so this special dinner presents quite a Bill Fillmore who assisted Jim at the rehearsal for the big dinner calls the dinner “sensitivity training for husbands" as it wives Sves the men a chance to realize what The men not only prepare the dinner but they serve it too In addition to the food the couples bring valentines for their spouses And each person at the party is asked to bring an object which characterizes the best quality of his or her spouse The whole object is to make this an upbeat experience to stress the good aspects of a couple’s marriage 4-- strips bacon 6 tsp Old Bay Seasoning or Vi tsp dill Vi weed crushed Fresh parsley Lemon wedges Thaw naturally if frozen Sever head and filet Wash salmon lightly and pat dry Sprinkle inside with salt and pepper Dot with butter sprinkle with Old Bay Seasoning or dill weed Arrange overlapping slices of lemon and onion inside Lay strips of bacon around exterior of salmon Wrap in heavy-dut- y aluminum foil double seal edges Bake at 450 allowing 12 minutes baking time for every inch of thickness at thickest Enchiladas Suizas (Richard H Berrett) 2dozcom tortillas Sauce: 1 onion diced 16 lb real butter Vi C flour ltsp salt V4 tsp white pepper 2 C half and half (or sour cream ) 6 oz green taco sauce ( med hot or to taste) 7 oz can diced green chiles 2 cans cream of chicken soup 2 C chicken broth 2 egg yolks weU beaten 1C grated cheese (Cheddar or as pre- ferred) Filling: (mix together) 4 C grated cheese (reserve topping) Vi C finely chopped onions 4 C cooked cubed chicken ' v ' 'v-- s V v ' v M- " 1W C for Scald the half and half making sure not to scorch Set aside Saute onion in butter until lightly browned then stir in flour blending thoroughly over a low flame Add salt pepper and taco sauce Gradually add chicken broth chicken soup and diced chilies Continuing to stir over low flame stir in the egg yolks then the hot scalded half and half Turn heat off add 1 cup of grated cheese and blend well In a 9 x casserole dish spread approximately one cup of sauce in the bottom Spread a generous 1 tablespoon sauce on each tortilla and add approximately 2 tablespoons filling in the center of the tortilla then roll up placing filling the casserole dish Pour remaining sauce over the top and sprinkle with the rest of the grated cheese Bake at 350 for 20 minutes or until it is bubbling in the middle Serve with a dollop of sour cream on top if desired (Dick likes a fried egg on top) Makes 6 to 8 generous servings 13-in- ch side-by-si- So Valentine's Day 18 people will gather at the Mitchell home tor a gourmet dinner that Jim Bill Ed DeMont Bart Hal Von Ron and Richard will prepare with love for their wives including stuffing (minimum 30 minutes) Do not turn fish Salmon should flake easily when tested by fork at thickest point Serve on platter with foil turned back surrounded by parsley and lemon wedges Makes servings point 8-- Baked Salmon Supreme ( Bill Fillmore) lb whole dressed salmon Salt and pepper 3 Tbs butter softened Vi med onion sliced (optional) 1 lemon sliced 5--8 2-- BBQ Salmon Supreme (Bill Fillmore) Same as Baked Salmon Supreme except use coals and turp every 10 minutes Check after 45 minutes medium-ho- t i V de Individual servin dishes using three or four enchiladas eac may be used the large casserole dish but baking time needs to be reduced to whatever time it takes to bubble in the middle See VALENTINES on page 14 |
