Add com meal, egg and onion salt to batter, stirring well. Impale shrimp on skewers, starting at the tail end and leaving an inch handle. Heat oil to 375 degrees in deep fat fryer, or heat oil 1 inch deep m skillet. Dip shrimp through batter, twisting handle to coat evenly. Drop one at a time into oil and cook until lightly browned, about five minutes. Up to six drumsticks may be cooked at a time, taking care that they do not stick together. If a skillet is used, turn almost immediately to insure an even crust. Then turn every minute until done. Drain on paper towels. Shrimp Drumsticks may be kept warm in a low oven until serving time. |
