Show resilience of the American dairy industry, through the medium of our milk condensories, that the lives of millions of children were saved and market created surely a world-wid- e for another American product. Utah with her fine dairy herds and manufacturing plants took a goodly part in this development. Located in the Cache Valley, at Richmond, Utah, the first evaporated milk plant to be built in this state was established. The firm adopted the name of Sego Milk Products Company, so called after the state flower, the Sego Lily. DEFENBS SWHXM THULE National collegiate swimming honors will be upheld for the B. Y. U. and the state of Utah at St. Louis March 29 and 30 when Bud Shields, of the. Y swimming captain-elesquad, and national collegiate 220-yad and free style champion will defend his laurels. Shields, unheralded last year, won both the 440-yad and titles back at Pennsylvania, setting new records in both events. His time for the 220 distance was 2:19 5 while he swam the d distance in 5:08 The great Y star has bettered both of these times repeatedly since then, and as a result is expected to make a very determined bid for retention of those championships in the pool of the University of Washington. He is Rocky Mountain conference champion at practically every event in which he has competed, shattering records at every distance. His con' quests during the state collegiate campaign have been aimed particularly at the back stroke record, and he succeeded in that direction by establishing 2 minutes and 42 seconds for the 200 yard distance. Shields and his coach, C. S. Leaf, are on the site of the meet now and the premier western tankster is training to support his national championships. ct rd 440-yar- CACHE VALLEY embraces one richest dairy districts in the West. This made an ideal locality for the erection of a milk conden-sarWith an abundance of fresh milk from the adjacent dairy farms together with the availability of all required materials. The cans are manufactured in Ogden and the labels and boxes come from Salt Lake City. The Sego Milk Products Company has grown into one of the foremost organizations of the interest. This company now owns and operates in Cache Valley, Buhl, Idaho, and at Galt and Salinas, California. Regarding the properties of this product, evaporated milk is just y. pure, sweet milk, twice as concen- trated as ordinary milk. Nothing has been added and nothing taken away except water, 60 per cent of which has been removed by evaporation at a low temperature. The milk has been sterilized, destroying all bacteria that might cause it to change from its original degree of freshness. The product is condensed to about 8.0 per cent fat and 25.5 per cent total milk solids. rd 220-yar- 4-- 440-yar- 2-- 5. There is an advantageous feature to this product, for unlike that of raw milk, the cream does not rise to the surface. This is due to a most important process in the manufac- ture called homogenization which consists in forcing the milk through a very small aperture, so small that it takes a pump working at 2,000 to 3,000 pounds pressure to force the milk through. This breaks the large fat globules into particles so small that they remain evenly distributed. It well can be understood that such an industry is tending to greatly increase the dairy business. The milk produced from these farms is more than adequate to supply the local demands and thus a lucrative market is made for an otherwise highly perishable food substance.
