Recipe books of a century ago ignored salads, but those of the present day stress them. A good salad can be made of almost any kinds of fruits or vegetables providing that they are fresh. If this happens they must be drained very carefully just before mixing. As a rule all that is needed for a salad are some few vegetables or fruits, a little good salad dressing, and some imagination. It is surprising the delightful changes which can be made in the most ordinary salads by simply varying the salad dressings used. Below are several dressings which can be used on summer salads. Mix dry ingredients, add oil, milk and water and cook in double boiler until thick.
