Add 3 parts cooked rice and 2 parts cooked tomatoes, bacon crumbles, salt and pepper to taste. Cook uncovered over low heat until hot, about 15 minutes. For Mexican Rice, omit the bacon and green pepper. Saute onion and minced clove garlic in another fat. Add 2 parts ground peef and brown. Drain off any excess fat. Add chili powder and raisins with the remaining ingredients. Pacific halibut steaks are baked inatangy orange sauce sparked with a hint of chives. Orange segments may be placed on or around the halibut and baked along with it. The mild flavor of the halibut is complemented by the tang of the orange. Pleasing accompaniments to complete the meal may be cabbage salad, almond rice, green beans and hot rolls. Fresh or frozen halibut can be obtained all year around. It should be thawed in the refrigerator when purchased frozen. Since halibut is easily overcooked, it must be watched carefully while cooking. It is done when it has changed to an opaque white and flakes easily with a fork.
