Show THE PAYS ON PAYSON CHRONICLE JjSNr vft Thursday, April 10, 1969 GOOD COOKS pisNTiatilUB; Corner Mrs. Thelma Lance James Jasper Today, before giving the recipes for vegetable salads, I believe it would be an excellent idea to pass along a few tips for better salad making. Handy tools make salad fixing more simple and quick. I always like to have a seasoned wooden salad bowl: that is to say, garlic and dressing soon penetrate the wooden bowl to the finest degree. This kind of bowl always pleases any connoisseurs taste. A great number of cooks do not even wash their salad bowls - they just rinse them with cold water and dry them with a paper towel. Soap, in a wooden salad bowl, is James Percy Jasper, ' ' strictly taboo! For crispy greens, I wash and dry-t- hen store. I always use COLD water to shower over lettuce. For crispy lettuce SOAK! DON'T EVER cups, I core each head and run water through the core. Drain. Peel off leaves as needed. Remove lettuce cups from very tight heads this way Wash, core and drain. Then, turn it topside down on a board; a hard cutting board; press down with the palms of the hands and wiggle the head first in one direction and then in the other direction to loosen. Gently pull off the cups. Store the balance of the head. I like to drain vegetables of all kinds in a wire basket and then store in a plastic bag, when nearly dry. Always use vegetables as soon as possible, for the very best salad bowls. .Our favorite salad bowl are usually mixtures of crisp vegetables just picked from the garden. With some people, this is impossible, but remember to purchase the freshest, crispest vegetables that you can, for the best results. Nothing is prettier or more appetizing, in my estimation, than a salad star. Susan Hansen Palmyra young woman was killed and her mother seriously injured shortly after noon Friday, April 4, 1969, south of accident. Mapleton in a car-truSusan Hansen, 20, driver of the car involved, died in the crash. Her mother and only passenger, Mrs. Louise Hansen, 61, also of Palmyra, was in fair condition at the Payson Hospital Saturday with broken ribs, multiple lacerations of the head and face, and internal injuries. Driver of the large diesel truck loaded with coal, Hughie E. WeighaH, 44, Soda Springs, Ida., was unhurt. Patrolman Sterling Christiansen said both vehicles were northbound and the car apparently turned in front of the truck as the latter was attempting to pass. The Utah Highway Patrol said the death boosted Utahs road toll to 53 for 1969, compared with 42 on the same date last year. The tragedy happened about 12:30 p.m. Friday on U. S. 50 and 6 a short distance south of Mapleton. The victim and her mother were retunring from a visit to a sister and daughter in Mapleton. Susan Hansen was born Jan. 15. 1949, in Payson, the daughter of Blaine and Louise Dixon Hansen. She was a graduate of Spanish Fork High School and LDS SemiBrigham nary, and was a sophomore-a- t Young University at the time of her death. She was an honor student. Susan was active in the LDS Church, having served as organist in the Palmyra Ward and Relief Society teacher at BYU. She was a member of the Spanish Fork High School studentbody council Girls State delegate, member of the Pep Team, Thespians andSapare Aude Honors Club. Surviving are ,her mother of Palmyra, one sister and two brothers; Mrs. Snell (Lorraine) Olsen, Mapleton; Dr. Kent Hansen, California; and Dr. Brent Hansen, Spanish Fork. Prelude and postlude music was played lOpening song was by Phyllis Roach. by the Singing Mothers, My Testimony," accompanied by Diana Money. Invocation was by President J. Austin Cope, Jr. Speakers were Bishop Edwin Firmage and President J. Angus Christensen. A tribute was given by Betty Madsen and an organ solo played by Linda Money, Evening Prayer." A ck To prepare use thick slices of tomatoes, cucumbers, turnips and green peppers, forming the star. These are turned on edge, like a cartwheel This is an idea taken from the Jackson Lake Lodge near Moran, Wyoming. Trim with small green onions, gherkin pickles and in the center, place a parsley nest, in which is hiding, ripe olives and tiny stuffed green peppers or olives. This is a beautiful salad plate. GLAMOR GARDEN: In a silver bowl, you place fluffy lettuce hearts and wedges in the center of the bowl Zig-za- g cucumber slices and tomatoe slices in the lettuce greens. Now, pass around the varieties of salad dressings! A number of readers have asked me for directions on how to make radish roses, radish dominoes, carrot curls, carrot corkscrews and other fancies. RADISH ROSES: Cut off the root of the radish, then cut or 5 thin petals around radish leaving a bit of red between. Use a grapefruit knife or the tip of a paring kmfe. Chill in ice water. Your radish roses will bloom. RED AND WHITE DOMINOES: Cut radish at the root end to make a deep X. Now, slice off thin circle of red peel in the center of each fourth. Leave on the top. Chill before serving. CARROT CURLS: First step in making carrot curls is to cut thin slices lengthwise with parer. Rest the carrot on cutting board. Pare away from you. Roll up the thin slices; secure with a toothpick.. Chill in ice water to crisp. Remove picks to serve. CARROT CORKSCREWS: Insert tip of short bladed paring knife, almost to the center of the carrot, at a slight angle. Rotate the carrot around slowly, so as to cut into spiral Deepen cut, if necessary to make the corkscrew flexible. Chill to open. CELERY FANS: These are a pretty variation of celery sticks. Cut tender stalks in 3 or 4 inch lengths. Make parallel cuts close together from one end almost to the center. (To make fans that curl on top and bottom sides, make another cut crosswise through strips, to split each one in two. Chill in ice water till strips curl I'll leave you now to clean up the mess. 0 imagine there is a little, after all of this.) 1 sincerely hope that you had a Happy Easter and that you will aU remember the true meaning of Easter.
