Care for Fruit Trees Or Remove Them The county Horticultural ciety, the State Department of Agriculture and the Extension Service will be pushing again this year to have all fruit trees cared for or removed. There are many old unsightly fruit trees in the county that are too big and old to be of any value to anyone. Trees that would be unpractical to prune and spray along with some old varities of fruit should be removed and other use made of the ground. If you have trees of this nature plan to have them cut down this spring. The above mentioned agencies are making contacts in the various communities to have someone assist in this program. Also individuals and groups who can use the wood are being asked to cooperate in this tree removal program. Hursh, M.D. Consultant, National Dairy Council MORE ON THE FAT SOLUBLE VITAMINS Last week we were talking about vitamin D and how it is produced by the action of ultraviolet light on cholesterol in your skin. This is one of the functions of cholesterol, incidentally, that indicates the importance of cholesterol, its essentiality, if you will, in spite of the fears some people have of this sterol because it may in some way be related to heart disease. Well, the main point everyone ought to remember is that causes of heart disease and its treatment are far from solved. Meantime, there is a history, of the merits of the American diet for producing a healthy, vigorous population, and I for one think people should not be stampeded into fearing this or that food or food component on the basis of research findings that quite often have little relationship to the way people really eat, anyway. Helps You Absorb Calcium But enough of that, and back to vitamin D. You need it because it helps you absorb calcium and to build calcium and phosphorus into your bones, making them strong. Your teeth, of course, are also involved. Very few foods contain significant amounts of vitamin D, although fish liver oils do. Also, as stated, we have no way of measuring the amount of vitamin D formed in the body by the action of sunlight. It varies, after all, with the climate you live in the season, and how much of a sun worshiper you are. This is the reason milk is fortified with vita min D, so that you get this essen tial vitamin along with the calcium in milk that you need to absorb. But now lets talk about vitamins E and K. In experimental animals vitamin E deficiencies are serious indeed, having to do with failure of animals to reproduce and maintain life itself. Vitamin E deficiency has not been identified in people. But vitamin E is an antioxidant in the important body. Infants fed polyunsaturated fats may have increased requirement for vitamin E. The vitamin is widely distributed in both plant and animal foods. According to nutritionists, people whose diet includes fruits, vegetables, milk, meat, eggs, and whole grain cereals are not likely to have deficiency of vitamin E. Vitamin K Vitamin K helps your blood to clot. It is essential for normal function of the liver and for the formation of a specific component in the blood that, along with other components, regulates your blood clotting time. Without enough vitamin K, clotting time becomes meaning prolonged, bleeding is harder to stop, and your capillaries become fragile. Its a deficiency you dont want and probably wont get on a balanced diet. There are medical instances in which vitamin K is administered to patients for specific reasons. But a normal, healthy individual is not likely to need such administration. Widely Available We make vitamin K through bacterial synthesis in the intestines of our own bodies. Vitamin K also is so widely distributed in a variety of foods that you neednt worry. Green leafy vegetables, tomatoes, cauliflower, egg yolk, liver of all kinds, and soy bean oil are good sources. Nutrition texts indicate that because it is insoluble in water, vitamin K is not lost in cooking the foods that contain it. Steven won ts - Bowling CUSTARD FILLING cup sugar 12 teaspoon salt 6 tablespoons flour 2 cups milk 2 eggs, beaten 2 teaspoons vanilla In a saucepan, mix sugar, salt and flour. Stir in milk and then cook over low heat, stirring mixture until it boils. Boil for one minute then remove from heat. Stir half of mixture into beaten eggs. Then blend this mixture back into milk mixture in saucepan. Bring back to a boil. Add vanilla and cool. Note: These cream puffs can also be filled with whipped cream flavored with appropriate flavoring. You may want to add diced fruit. Another good variation is to use ice cream and cover all with a chocolate hot sauce. I have had several requests for Easter recipes and decorations.
