The rest is history — and good fortune for Utahns ! Looking especially fit and 25 pounds lighter after returning recently from five weeks trekking in Nepal Mr Nobis smiled saying “It washes you” 't “Experiencing the glorious land- scape and feeling the incredible warmth of village people was mag- nificent To call it a trek does not give it justice" He said the trip was difficult but wonderful as he traveled with a friend Hooman Aprin Himalayan climbing guide who lives with his wife also a climber in Jackson Hole Wyo They were accompanied by two tribe Sherpas (from a descendants of Tibetans) and two porters from the Tamang tribe “We became good friends” he aaid “Nepal is such a vertical country in the Himalayas — either straight up or straight down Imagine hiking from the bottom of the Snowbird parking lot to the top of the tram three times a day for five weeks and you can get a feel for the trek We figured we walked about 450 miles during the time there not counting the ups and downs and there were ’ high-altitu- 6 to 6‘s cups whole wheat flour 1 teaspoon cornstarch Vs cup boiling water Dissolve yeast in 2 cups warm water 15 minutes for about In large mixing bowl measure butter sugar and salt add dissolved yeast and cumin Slowly add flour to yeast mixture (“I use my favorite kitchen tool a wooden spatula to mix in flour at first then use my hands”) until dough passes the sticky stage and becomes moderately stiff If desired you can use 5 cups whole wheat flour and 1V4 cups toasted wheat germ Put dough on floured surface and knead with care until you can make it into a smooth ball Put in greased bowl cover and put in warm place Allow to rise until doubled in bulk about 1V4 hours Punch down make another ball and repeat rising Place dough on lightly floured surface divide in two portions Roll each into log of dough 10 to 12 inches long Put on greased baking sheet side by side Take a very sharp knife and Vi-in- liberally with cornstarch mixture Bake an additional 15 minutes brush with more cornstarch mixture Put back in oven for 10 minutes or until loaves are dark golden brown and sound hollow when tapped Let bread cool Never store in plastic Makes two loaves Vegetarian Pate 4h i cups cooked fresh green beans or 4 cans (16 ounces) cut green beans well drained cup toasted walnuts cup white wine Salt and pepper to taste 4 eggs beaten cup heavy cream Peach Chutney Vi 6 hard-cooke- eggs d of chutney take 3 eggs per pan and place end to end (end sliced off so you can butt them together) place in indentation Top with a little more chutney then spoon in remaining bean mixture to about V inch from top Bake in 325 degree oven one hour or more Test like a cake with wooden pick or skewer cooking until pick comes out clean Chill overnight before removing from pan Slice to serve Roberta’s Peach Chutney “This comes from Roberta Glid-de- n Ogden my good friend” 10 cups fresh peaches chopped 3 cups sugar 2 cups vinegar hard-cooke- 2 cups feta cheese Pulverize beans in blender or food processor Toast walnuts in 350 degree oven place in blender and carefully pulverize (they go to butter easily) Combine beans walnuts wine salt and pepper (“In my case heavy on pepper”) cayenne pepper and curry powder Saute onion in olive oil until soft add to bean mixture Soak feta cheese in water to cover to remove salt (“This takes quite awhile so you might want to do it overnight") Crumble feta cheese into bean 1 1 finely chopped onion chopped fine d cup raisins cup fresh ginger peeled and 1 large 3 or more cloves garlic peeled and chopped fine ("I use more ”) 1 tablespoon salt 1 tablespoon cumin seed dry hot chilies or 5 to 6 jalapenos chopped 1 tablespoon In a large pot combine peaches! sugar vinegar raisins ginger onion garlic salt cumin seed and chilies! simmer until thickened three to four hours Pour or ladle into hot sterilized jars and seal To ensure sealing process in boiling water bath for 10 minutes Makes about six pints “This is also excellent served with cream cheese as an appetizer” Vi Vs lh teaspoon cayenne 3 teaspoons (good) curry powder 1 large onion chopped 2 tablespoons olive oil In separate bowl beat' until smooth the beaten eggs with heavy cream add to bean mixture “You can use a buttered mold but I use two buttered bread pans” Fill half full with bean mixture make a trench and spoon in some Peach Chutney (recipe below) On top ' ' sav ' svvW?v v ' s v A SIZARS portrait studio Thane's Still Time PORTRAITS TAKEN BY DEC 17 READY BY CHRISTMAS!
