Some varieties of the same kind of fruits and vegetables freeze well. Others do not. By Donna Lou Morgan Lifestyle Food Editor Freezing preserves food because it delays or stops the growth of bacteria, molds and yeasts and retards the activity of enzymes for many months or for only a few days, as desired. Without sugar, use V teaspoon ascorbic acid in 2 tablespoons cold water and sprinkle over fruit before putting in jar. Pack fruit in containers with g bds. Use garden-fresvegetables when they first reach their most perfect stage for cooking. Fill large kettle with water and place over heat to boil. Have plenty of ice water available for quick chilling. Sort vegetables and discard all tough, e wilted or pieces. Wash, rinse, dram, then place in wire basket or cheesecloth bag. Lower basket or bag into rapidly boiling water. Cover kettle and scald vegetables for one to four minutes, depending on size and type of vegetable. Plunge vegetables m ice cold water to cool quickly and to stop the cooking. But I dont think that means we should all go on a bran binge. It seems to me the best way to get a good amount of fiber is to eat plenty of whole grains and fresh vegetables and fruits.
