First of all, food grains (wheat and rice) and feed grains (corn, barley, oats, etc.) are not synonyms. The amount of food grain that is fed to livestock is absolutely negligible and limited to that which is too low quality for human consumption. Beef cattle and sheep receive well over 80 percent of th:!ir diet from high-fiber for-age which humans cannot digest nor feasibly harvest. In addition, much non-forage feed for livestock is in the form of by-product and aftermath of human food production which would otheTWise be wasted. Even after all animal and human uses of grains in the United States, there is still surplus. As far as grains are concerned, the problem of world hunger results not from inadequate production, but from distribution, poveny, and politics. As a matter of fact, it is ironic that those suffering from hunger usually are lacking in protcin and energy-rich food-the vety nutrients which animal products richly provide. Thirdly, concerning the greenhouse effect and global warming, beef cattle in the U.S. account for only 1/2 of one percent of world methane production and 0.1 percent of CO2. Worldwide, all cattle for all purposes contribute less than seven percent of global methane and methane is only 18 percent of all greenhouse gases. Additionally, there now exists safe technology in the U.S. to reduce this even further. Driving a car 12 miles to purchase a hamburger produces 100 times the CO2 as the methane generated in producing that hamburger. We should also note, that there is growing dispute in the scientific community regarding the issue of trends, causes, and seriousness of global warming. Given the current state of scientific development on the subject of global warming, one would be on thin ice to draw firm conclusions about its current or future trends. Finally, Mr. Rifkin's claim that it takes 2,464 gallon of water to produce one pound of beef. To provide perspective, the same study determined that it took 81,450 gallons per year to satisfy the domestic needs for one person in Fon Collins, Colorado. We believe that image is highly misleading and inaccurate and may well be a divisive influence against building reasonable compromises on land-use policies. There exists strong evidence that through the efforts of ranchers, animal and range scientists, range managers and moderate and responsible environmentalists, there is a growing cooperative effort to successfully achieve the objectives of improving the quality of lands and preserving the quality of life for those people who strongly prefer rural lifestyles and values. It is small wonder that the ordinarily environmentally oriented Audubon Society criticized Rifkin's book Beyond Beef as "deficient in scientific perspective."
