Show 4D Lakeside Review North, Wednesday, Dec. 21, 1983 Soup Recipes Offer Winter Warmth, Convenience LYNDIA GRAHAM Review Correspondent Both the warmth LAYTON of a good, hot bowl of soup and the convenience of serving it appeal to Karel Love, a young Lay-to- n mother who said that she serves soup often in the winter months. Soup is easy to have ready, she said. With a busy husband who often is gone in the evenings to various meetings, Mrs. Love added that soup is a good supper, not only because it is nutritious, but it doesnt burn up or dry out while waiting to be served. She seved three of her favorites to a group of near 40 at a progressive dinner recently and found that they were very well received. Soup is also a part of her husband Darrells family tradition for the new year. Loves father, Newell Love, of East Layton, always cooks up a pot of beans and ham for the New Year celebration. He said that if we all eat a spoonful of beans on the New Year we will never go hungry throughout the year, she said. While ham and beans are a common and fairly easy dish to prepare, the little extra time needed to make the following recipes is well worth the effort.. The Love children, Joanna and Darrell, agree that the soup is worth waiting for. Blend in the flour; cook and stir one minute. Pour in the stock, cooking and stirring until thickened. Set over boiling water. Add the cheese and stir until melted. Then cream to consistency with milk. Strain the soup and season to taste with salt and pepper. Serve hot or chilled. Makes about 2 quarts. Creamy Broccoli Soup ' cup butter or margarine minced onion 3 tbs. flour l'A tsp. salt Vi tsp. celery salt Vi tsp. ground sage V tsp. white pepper few grains of cayenne pepper 3 tbs. 2 cups water 4 pkg. (10 oz. each) frozen Blend in flour, salt, celery salt, sage and pepper. Heat until mixture bubbles. brussel sprouts, partially thaw-ee- d and quartered. Vi cups shredded Parmesan Gradually add the milk, stirring constantly. Bring to boiling. Stir in the broccoli. Cook over low heat, stirring occasionaly, 10 to 12 minutes or until broccoli is tender when pierced with a fork. Mix in bacon pieces and heat about 3 minutes. Serve at once. Yields about 6 serving.. Note. For a cream soup blend in a blender and use bacon as a garnish. cheese. Fry bacon with garlic in a large saucepan or dutch oven until bacon is partially cooked. Add three cups of the broth, the milk, rice, and a mixture of the oregano, tsp. salt and the pepper. Bring to a boil, reduce heat and simmer for 13 minutes. Add peas and carrots, bring to a boil, reduce heat and simmer for 10 minutes or until tender. Meanwhile combine remaining broth, salt, and water, in another pan. Bring to a boil and add brussels sprouts. Bring to a boil and then simmer, uncovered 10 minutes, until tender. Add brussel sprouts and their cooking liquid to the rice mixture. Stir in cheese. ' Vi tsp. black pepper Add onion and cook until package frozen peas and 1 1 1 Vi . Heat butter in a saucepan. Add flour, salt, and pepper. Stir until it bubbles. Gradually add cream and 1 cup of broth. Stirring constantly, bring to a boil minutes. and cook and stir Blend in remaining broth and turkey.- - Heat through but dont boil. It can be made from all colors of paper to match any decor. The casual appeal of this lamp may enhance the game room,' family room, a teenage bedroom, even a kitchen. ' Material Needed 100 hot and cold sytrofoam cups 250 paper clips 13 square feet of wrapping paper, tissue paper or construction paper 4 oz. bottle glue 12 feet of lamp wire . 12 feet of chain or wicker chain 1 light bulb fixture (hanging type) 1 plug unit 1 pull chain extention 1 metal coat hanger pair wire cutters making sure entire edge has glue on it. Then stick to back side of paper squares. Let glue dry then cut around edge of cup to make paper round. Begin paper clipping small ends of cups together as you clip them together they will form a globe. When you get down to. the last 6 cups, stop. Attatch lamp cord to light fixture and chain Attach plug. Put on extention chain to pull chain. Cut hanger into two straight pieces about 8 inches long.
